To ask you what I can do with a massive joint of gammon?

I got sucked into the excitement of Costco, and bought an enormous gammon joint. We don’t even eat gammon that often.

It’s been in the freezer for a month as I’ve no idea what to do with it. It’s too big to fit in the slow cooker which is frustrating as that would have been my go to! DH’s grandparents are coming for dinner next weekend, so thinking of finally using it. However I don’t want to just chuck it in the oven on it’s own and cook it dry. Anyone have any lovely recipe suggestions?

If sawing it in half frozen is too much for you, and I wouldn't, you could ask if your butcher would do it, ours did it for my dad; a not very frequent customer.

Or defrost and cut some steaks off so it fits in your SC. Or boil in desired liquid on hob in big pan. I think boiling and then roasting for just long enough to brown, or not roasting at all is better than all roasting dry.

We do the Nigella recipe cola ham every Christmas, some of leftovers used in various ways over the next few days, whilst rest is sliced/diced and frozen in appropriate mealsized portions.
It's delicious.
There was almost a mutiny from DM, DD & DS last Christmas when OH & I floated the suggestion of something different Grin

Defrost the whole thing, don't bother trying to saw it frozen!! You'll lose a limb Shock
Cook it all and freeze leftovers.

The recipe we use calls for boiling it in coke, then finishing in oven with mustard and sugar.

The cooking liquor could be strained and reduced to make a bbq-y sauce I guess. We use a smoked joint so it could end up pretty salty?

I do mine in pineapple.

Line a baking tray with enough foil to completely cover and seal the gammon. Line the bottom of the foil with pineapple rings, put gammon on top, cover with more pineapple rings, seal the foil all the way round the gammon, bake in the oven following the cooking instructions, with the last half hour opening up the foil.

A very succulent gammon, never dry. We have it as you would a roast, then ham egg and chips, then Spanish omelette, and if any left, with a sweet and sour sauce.

Portion it out.
Cooked ham for naice sandwiches.
I put chopped bits in a risotto with mushrooms and mustard.
I had a cider glazed one once.

Defrost it, cut it in half or even thirds if it is enormous. Roast it, basted with honey and after a while pour peach or pineapple juice over and put the fruit around it. Yum.

Am I the only person who doesn't like cola gammon? Maybe I just cooked it wrong!

Anyway. Our favourite here is the slimming world bbq pulled gammon.

My absolute favourite to serve with Gammon is braised red cabbage with Apple, and coleslaw. So so good

Saw in half as others have said. Cook one part in the slow cooker recipe of choice. Plenty above.

Cook the other half in the slow cooker with just water, and maybe a carrott and bayleaf if you can be bothered. Then slice and re freeze in batches (it is safe to do this once defrosted and cooked). Keep it for Brexit shortages. You can thank me later!

We also do either gammon in coke, cherry coke or ginger wine.

Then slice it into thick slices/chunks, drizzle with maple syrup and brown sugar and pop it in to roast. And usually serve with roasties and veg

Poach it in guiness, then glaze wth honey and mustard and roast, delicious hot and cold for sandwiches, salads etc

Well, where I live you could probably stick it in a pair of red trousers and get it elected to parliament.
Alternatively, bake it in marmalade - yum!
