to ask for your best vegan diabetic cake recipes?

Posting here for traffic. A friend is vegan (a life style choice) and diabetic (not a choice, obviously). I want to make a cake which they are able to share and would love any tried and tested recipes.

I think you should of he fine just sticking with the vegan aspect, and let friend know how many carbs are in the cake to adjust insulin accordingly.

Really? I know very little about food for diabetics although I have a good vegan sponge recipe which I used for vegan friends. Made a chocolate version with a dark choc-soya cream icing. Tasted fine, even for carnivores like me!

You don't need a diabetic recipe. You just make a vegan cake and let them know the carb content and that's it.

There's not really such a thing as "diabetic' food but cake would have a bigger affect on blood sugar than something like vegetables so it's a case of adjusting insulin accordingly. For type 1 anyway.

Sadly ive not tasted a vegan cake that tastes good yet. Its vvv heavy without eggs. Can do bake biscuits instead

The Nigella one looks good, thanks. Do I just list the quantities of ingredients on a post it or do I input them into a website and give the results? It also has to be Halal, by the way but i suppose a vegan cake is by definition Halal unless it contains booze!

Depends on the type of diabetes and how she manages it.

If she takes insulin and carb counts, she'll be able to have a very good guess as to the carb count of a piece of cake.

If she does need a lower carb diet then using sweetener won't make too much difference as the cake will contain flour...almond flour and xylitol is the best combination I know, works well in Brownies. Stevia has a horrible after taste.

Type 1 or Type 2 diabetic?

Type 1 - just make a cake and tell her how many carbs are in it.

Type 2 - shouldn't really be eating cake, her choice. There is no diabetic cake. Sometimes my mum wants to live a little so has a small portion.

And people have different ways of managing diabetes. Some T1 diabetics eat low carb, reducing their insulin requirements and thus fluctuations in blood sugar. Others don't choose to do that.

Some T2 diabetics will be taking insulin.

"Shouldn't eat cake" is a silly thing to say. Cake with almond flour and sweetener would be very low carb and wouldn't need much insulin to cover it, if any.

Thanks everyone. She is very slim and sporty so I am going to presume it's not type 2. I will make something and send details with it. She bought a cake of mine at a charity auction, even though she couldn't eat it herself, just to support the charity. I thought I would make something she could actually enjoy.
