To not understand why chocolate covered Katie recipes are healthy?

I've been trying to find healthy ways of baking for the kids are came across her website. But I'm a bit confused by how some things are touted as being healthy.
For the baked goods recipes most of them still include refined sugar. Recipes are vegan so avoid butter but replace it with eg an entire cup of nut butter. Which is also full of fat.
Recipes like tofu chocolate mousse include tofu, sugar, chocolate. I don't see how this is really better than eggs sugar and chocolate.

I'm happy to be told I'm wrong on this, as then I can make the recipes and feel virtuous.

Alternatively, if anyone knows a recipe website that's good for healthier baked goods I'd love to know about it. Not ella balls type things though, my kids don't believe that they are actually food.

No one food is healthy or unhealthy. It's over all diet that matters.

Add more nutrient dense foods, eat less sugar and trans fats.
