FFS! Boiled carrots for too long! Can I still roast them?

Was feeding DD and they are now boiled and not par boiled! Argh! Can I still roast??

Mash them

You can still roast; make sure oil is very hot when you put them in.

They’ll be ok to roast but they’ll probably break down a bit anyway so I’m with @TotemIcePole - mash ‘em. With a bit of ginger and lots and lots of butter.

Yep, crush them, add butter and pepper. Yummy.

I did roast still as I knew the mash wouldn't go down well with my fam - tradition etc...they were very happy but only because my in laws like overdone food anyway! Happy Xmas all!
