To ask about your cheese

Please help me with storing my block cheese in the fridge. It either dries up or gets all moist and mouldy. I've tried bags, containers, ziplock. It's normal cheddar cheese

Please tell me what you do, I always end up having to trim so much cheese off the sides, its driving me crazy :(

We eat cheese faaar too fast for this to be an issue, but MIL who is the food pre-prep and storage goddess wraps hers in wax paper and then in aluminium foil. She also does the no-touching thing. Lasts for weeks.

OP it sounds as if you are letting the cheese get warm and then re-cooling it if it is going off that quickly. Make sure you keep it cool as much as possible: if taken from the fridge use it quickly and then put the block back.
Also consider chopping your big block into smaller ones and freezing them: you can get one at a time out as you finish each.

I have the exact same problem OP, I end up just cutting the mould off, I’m not sure what we are doing wrong either!

I buy cheese in 2.5kg blocks. I bought a vacuum sealer specifically for my cheese. That's sad, isn't it! I do use if for other things though, now and then!
Having said that, I've never had a problem. I do grate and freeze for cooking, if grated it means you can use it straight from the freezer into a sauce or on top of toast, or as a topping on pies etc. The piece I keep in the fridge wrapped in a piece of kitchen roll then bung in an ikea re-sealable bag,. Seal along top. I use the kitchen roll to hold it when I use the cheese.

I have a Tefal cheese preserver box in my fridge. The cheese never goes mouldy, even if I keep it for more than 2 weeks.

I keep mine in its original packaging and put it in one of those click-lock containers.

Never have to shave manky bits off the sides!

I bought a special cheese box with a filter on top from Amazon. It works. I have not had any problems since I got it.
