Ok - I am not from Cornwall.

I've been struggling with my veggie teenage DS and what to cook.

This is a bean, potato cake and cheese pasty.

It's far from my finest gastronomic creation - I made steak/red wine pie for DH and I - but my DS bloody loved it.

I'm feel somewhat smug in the kitchen tonight and thinking of more pasty creations for another day Grin

In case it helps, here are some quick and easy things my mum cooked for me when I turned veggie, to the horror of my carnivorous family:

Lentil spag bol
Pasta salad piled with veggies and cheese (extra mature cheddar or feta and cracked black pepper mayonnaise for extra taste)
Shep pie made with mushrooms and lentils and onions
Quorn chilli non carne with jacket potato
Fajitas
Stir fried vegetables and rice with an egg stirred through at the last minute

Erm.....Don't mean to be rude...but that is not a pasty as Cornish people know it. But, that said, it sounds really, really tasty. And yes, I am from Cornwall originally. I now want a homemade pasty! Smile

I fully appreciate it's not a traditional pasty Grin- can we call it a Stuffy? I.e. Stuff in a pastry case?

As for the recipe - well given I make most things from scratch I'm a bit ashamed to call this my own....

Hey ho.

I took a sheet of JusRoll puff pastry, cut it in half and then put about 2 dessert spoons of beans on one quarter. Added some chopped up Potato cakes (I can make my own but cheated with bought ones) and then a good sprinkle of mature cheddar.

Sealed round the edges with egg, folded into a rectangle (sorry crimping is beyond me) - squished round the edges and brushed with egg wash.

20 mins in the oven.

It was very, very tasty.

2 that we like are -

Quorn frozen bacon pieces, cooked then add baked beans and chopped tinned potatoes

Sainsburys frozen vegetarian Mince and chopped onion, cook and then add thick onion gravy, just enough so it's not sloppy

Oh OP, I hope I didn't offend you! Back down in Cornwall, given the rectangular shape, your tasty creation would be called a 'slice'. And it really does sound tasty with your filling. I am so going to make proper homemade Cornish pasties this week now. Trouble is, I'm on my own now & it's not worth it for just me! I'll have 2 spare if there's any takers!

Can also add chopped tinned potatoes to the second one, just before adding gravy

I also like using puff pastry to make little tartlet type things with toppings like

Tomato puree, mozzarella, spring onion and sliced tomatoes
Pesto, tomatoes and mozzarella
Onion marmalade and mozzarella
Tomato puree topped with roasted veg
