To think this cake can be saved?

DS and I made a lemon drizzle cake for DH's birthday - put the drizzle on yesterday and quickly hid it, but this morning it's a bit sunken and on closer inspection is undercooked in the middle despite a clean skewer telling me otherwise...

Could I stick it back in the oven for 10 mins and salvage it, or is this cake only good for punching?

DS will be gutted if we have to throw it away so I hope IANBU.

Cut they cooked middle out and put sweets inside ?

Put it in the microwave, which will cook the middle bit. It might become a bit deformed, but will still taste yummy.

Failing that, use the cooked bits for trifle.

Or scoop out the middle, uncooked bit, and fill with raspberries.

This is not a lemon drizzle. It is a soggy - in - the - middle cake which is even better! Definitely my favourite sort as the flavours seems stronger. Needs eating with a cake fork, or possibly a spoon though Wink

2nd the microwave. You've nothing to lose. Do it for 2 mins at a time from room temp.

I wouldn't microwave - I second the suggestion to cut out the middle with a scone cutter or something and fill it with raspberries.

Or is it a loaf-shaped cake?

UPDATE for all you place markers ;)

I microwaved it for about 4 mins. Was worried it was going to be a bit scrambled eggy but it turned out fab once cooled, if slightly misshapen. Thanks for the suggestion
