In ridiculously sad excited. I got given an Instant Pot Duo 60 for Christmas and it is utterly fantastic!

I cooked a cheesecake in 25 minutes. It's delicious. Then I pot roasted a 2kg joint of beef in 45 minutes -beautifully tender and still just ever so slightly rare in the middle.

I think, scrambled that the key is not having tomatoes in contact with the base of the pot. So layering tomatoes in the pot is fine, as long as they aren't the bottom layer. E.g. if people make lasagne in the pot itself, they'll have most success if they use a layer of onion first (because the irregular shape allows steam to move through it, then pasta, then meat sauce, white sauce and so on. I did bolognese by just adding tomatoes on top then stirring at the end.

Pang for you it's the flour. One way of rescuing it is to decant it into a different bowl, clean the IP pot, then sit the bowl in the IP on the trivet, using the 'pot in pot' method.

My latest success was beef and haricot bean casserole. I didn't follow a recipe for this but would be happy to post it if anyone is interested.

Does anyone know of an IP compatible steamer basket for steaming vegetables etc? Had a look on Amazon but nothing stood out.

Im pissed off because my 7 inch pan arrived while dh was picking me up from work, we missed it by 5 minutes.

I was so looking forward to making a cheesecake for dessert and now I can't. No shops close enough sells them so ill have to wait until tomorrow now...

What a shame U2. Do you have a pyrex bowl or similar, you could make it in that? I saw some on the FB IP page using glass bowls for cheesecakes, and an added advantage is you won't get a soggy base!

Oh that is a shame. Do you have any ramekins? You could do individual ones, stacked up in the pan.

I made yoghurt yesterday, and strained it to make a surprisingly small amount of plain greek yoghurt. I think it was worth it though, because the flavour is much less sharp than a lot of store-bought yoghurts. In fact the DC who normally hates yoghurt absolutely hoovered it and asked for more, so definite win! I did put a dab of honey in but not much, considering.

Next time will do it in a bowl and store in a big jar. Fiddly little jars may look nice but they're not practical when you have a small child hanging off your arm.

Making this tonight - hope it's good. Tomatoes are definitely NOT going in the bottom of the pot.

I'm not doing yoghurt.

Did one lot and it just curdled Hmm so I'm trying again now.

I haven't got anything to strain mine with though. My mum makes it and never strains hers but I like mine thick but until I buy some strainer or coffee filters I can't do it.

My meatballs were great. I use this thing daily and I still so thankful to the OP for this post. My love of cooking has been rekindled.

Tonight I had just 10 minutes between DD1 coming in from school and going to pick up DD3 from Ceilidh. Just in case anyone is lurking and can't decide:

I cut an onion into 8 chunks and put it in the pot with 2 cups of water, then put 2 packets of frozen diced lamb shoulder on top. 6 or 7 carrots, topped and tailed, then a squirt of tomato puree, a can of chopped tomatoes, a stock pot and a spoonful of garlic paste. I set it for 35 minutes. Then I took the carrots out, stacked them, and sliced them (sooo fast -why do we chop them before they go in??). I put them back in, gave it all a stir and thickened with cornflour. Job done.

it's heeeeere!! 1.15 today, it arrived

I unpacked it and gazed in wonder at it for a bit, then I read the instructions, which freaked me out

AND then I steamed three litres of water, that went very well. Hmm

I just cannot decide where to start, I have lamb chops in the freezer, and chicken breast, and chorizo, loads of beans....of course I want to do cheese cake

The dog in the manger is that on tuesday I already slowcooked a kilo plus of venison in red wine for pie for tomorrow, so no main meal opportunity until Saturday!

Do you think I could saute off some onions, carrots and celery, and then layer that up with sliced potatoes, the lamb (defrosted or from the freezer?) plonk in some lovely lamb stock and rosemary and have a nice Irish Stew?

I'll do a cheesecake for tomorrow! :D

U2 ..i often strain stuff though a single bit of kitchen paper laid in a sieve, it works better if it is cheapo kitchen roll, if it's the better stuff you can sometimes pull the layers apart, and just use one.

oh well....I did wonder,

but it did say "up to the 3 mark in the pan" and taking into account that made it half full I thought it'd be okay

it was, but I can see 3 cups would be a bit quicker

ALSO a small moan already I am vexed by the cup being not a real sized cup ...they are usually 225/250 and the one supplied is only 160 (or maybe 180 ...is that Canadian nonsense?? Just to spite the Yanks??

When I did my first test run I put in 3 litres of water instead of cups Grin

That chicken masala thing is very tasty, although I made the mistake of turning up the sauté function to high and some of the onions caught. I decided to put the onions aside and wash the pot to avoid the dreaded overheating. It needs more than 1/2 cup stock, more like 1 to 1 1/2. Oh and I didn't have any paprika (paprika?! wtf?) so I threw in a whole hot chilli, pricked with a knife, and some garam masala.

There are a few things I would do differently next time. Slightly longer on the cooking, maybe 17-18 minutes. More tomatoes at the end and cook out for longer. Yoghurt instead of cream if really necessary. Probably will remove the skin beforehand because, ugh, slimy chicken skin. But those are minor quibbles and I'll definitely make it again.
