In ridiculously sad excited. I got given an Instant Pot Duo 60 for Christmas and it is utterly fantastic!

I cooked a cheesecake in 25 minutes. It's delicious. Then I pot roasted a 2kg joint of beef in 45 minutes -beautifully tender and still just ever so slightly rare in the middle.

Aaaah! Thank you! I am very easily confused at the moment to be fair. Dh was Confused that I put he cheese cake in without water. He kept asking me how I thought it would cook. how the friff am I meant to know?!

I'm ignoring him though as he's snurking rudely about the terminology and just asked me if I fancy a "quick release" Grin

claig · 07/01/2016 22:02

'Even if I can't get my head around it, which means I will have to buy a book or two on them.'

Have a look at youtube. Set it up from a youtube video, cooked a beef roast one-pot from a youtube video, worked out well.

Pleased with it, also much less washing up required.

TempusEedjit · 07/01/2016 23:15

I'm tempted to buy one of these, you have the kind of evangelical attitude about it that I have with my Philips Airfryer Grin

Can anyone tell me, if you cook a chicken joint of beef etc in the Instant Pot does it brown at all? Or does it come out a bit stewed looking?

lougle · 07/01/2016 23:26

Tempus if you don't do anything to it, it will come out pale. Some people brown a chicken/joint first (the IP has a sauté function, although a lot of people in the US seem fond of their broilers (grill to you and me). Other people cook it in the IP and then pop it under the grill to brown the surface.

You can saute the beef first in the Instant Pot by putting some oi in and pressing the Saute button etc to brown it and after that you start the pressure cooking of it.

Thanks lougle and claig.

One more question, how can I get over my fear that the thing might explode?! My mum used to have a traditional pressure cooker and it always looked as though it was teetering on the brink of kaboom...

Gobbolinothewitchscat · 07/01/2016 23:35

tempus - I basically did everything wrong on my first attempts so if it was possible to blow up the house, I would have!

TempusEedjit · 07/01/2016 23:49

Hahah Gobbolino yes I was reading your posts, that's a fair point.

Sold!

Gobbolinothewitchscat · 08/01/2016 00:14

I've just had another slice of cheesecake. It really is very good

DH is a bit worried that we will be living on stew and cheesecake until the novelty wears off!

I may try risotto tomorrow.....

lougle · 08/01/2016 07:40

Tempus - Safety features - for it to explode, it would have to override all 10 safety features. For one or two safety features to override is possible. For ten to override would be extremely unlikely. It would need the temperature regulator, steam valve, electrical current sensor, pressure regulator, pressure sensor and temperature sensor all to fail.

Thanks lougle, that's very reassuring. I will definitely be getting one.

What's on the menu today?

lougle · 08/01/2016 11:17

Today I'm going to try Mongolian beef with sticky rice and a Spanish flan that I saw on the fb group.

I'm also going to whack a cheesecake out -I'm going to make lemon curd and lime curd to swirl in the top.

saltedcaramelhotchoc · 08/01/2016 12:02

I am meant to be economising but I want one of these! I'm in the FB group and have been since November.

saltedcaramelhotchoc · 08/01/2016 12:03

Pressed post too soon. Meant to say all that stops me is a fear I start chain-making cheesecakes...
.. And the money, obviously.

Ruhrpott · 08/01/2016 13:03

Mine was delivered this morning, no one was in so they (parcel force) just left it dumped on the front doorstep Shock My daughter just found it as she came back from her GCSE exam. Good job we live in a relatively safe area.
I'm now away for why whole weekend, so can't try it till Monday Sad

lougle · 08/01/2016 13:18

Mine was delivered in the middle of December and I had to wait impatiently until Christmas, then couldn't use it because we had Christmas/Boxing Day with my parents!

Here's my cheesecake just out of the Instant Pot -it's still jiggly and needs to set in the fridge properly. That's the stage to take it out at, because if you cook it much longer it will set very hard and crumbly -you have to have faith!

I made a lemon curd and a lime curd to flavour it. Really quick and easy.

What tin do you use lougle? is it a springform thingy?

I'm excited about mine arriving but feeling a little bit daunted. If I can crack porridge firstly then that will hopefully appease DH who is a little bit Hmm about it all.

I'm planning to do porridge pot in pot as only a small amount is needed for DS1 each morning. Any tips from anyone?

lougle · 08/01/2016 18:35

No, if you use springform you have to use a mitch smaller tin because the clip/spring adds to the diameter. An 8" tin becomes 8.75", so too big.

If you use a loose bottomed deep cake tin (so the bottom is loose but the sides of the tin are fixed), then you can use an 8" tin, just! To use an 8" tin you have to fold a long strip of foil and put it under the tin, with the ends coming up past the top of the tin. Then you can use the foil strip to lift the tin out of the IP.

Just tried my new Instant Pot for the first time - made a quorn & veg curry.
Had a few false starts with it overheating which after a quick Google I reckon was because I had starchy veg in there plus coconut milk. I switched to low pressure, did it for 8 minutes, and I have to say the results were really quite fantastic. Clean plates all round, the quorn had really soaked up the flavour and the potato chunks were lovely. I can see me using this A LOT ! Can't wait to get some meat in there now. Yes, not a bad first go at all, very pleased.
Also, love the little Mits it came with, very handy.

lougle · 08/01/2016 19:43

Great news, worms!

My Mongolian Beef with sticky rice has come out nicely. The rice want done after the time stated but came out good in the end!

I've had a bit of disaster tonight. Made a chicken recipe that I've done a lot before with mushrooms peppers and cream and it's gone quite horrid and the cream's split. I do it in the oven normally and did the, usual quantities but the instant pot said it was overheating so had to put in more stock and cream. I had 4fl oz of cream and 1/4 of stock originally which seems a,fair bit of liquid so bit confused as to why it was overheating. I'm normally quite a confident cook and this is knocking my confidence a bit

Will try your beef recipe lougle - looks lovely.

eatingworms · 08/01/2016 20:07

Maybe the cream was burning Gobbolino?
I added cream to my curry but I waited until the end.
