To not toast my pine nuts

Made a salad yesterday and my friend didn't understand why I didn't toast my pine nuts as they taste so much better.

Granted they may taste better, but I think they taste great without it and I've always thought that toasting nuts destroys much of the goodness, and when pine nuts are so expensive (especially the beautiful large Italian ones) I don't want to bastardise them.

Untoasted they do taste kind of soapy and soft. Toasted - by which I mean tossed briefly on a hot, oil-less frying pan until they go golden all over - they redeem the most banal salad. But yes, the fuckers burn the second you take your eye off them.
