So say you would like to buy a drink (but not exactly sure what) and out of 20-30 different bottles/cans only a few have prices on... and you don't want to pay over the odds (or just out of principle like me)

Do you ask for every single one? Do they invent the price in the checkout? Based on your face? or... how does it work?

Depends on the offlicence. But the one like that which I go to, the deal is "if you care how much you are paying, get one of the ones with a price on. If money isn't the issue and you want to choose without thinking about the price, choose one of the unlabled ones" - Some people actively prefer not to be told the price as it distracts from the choice. If you take it to the till and it's more than you want to pay you can always change your mind.

I see.. that comes as a surprise to me that there are lots of people who prefer surprises like that in the till. The offies I'm talking about are in an area with lots of not-so-well-off people, students etc.. hmm. i'm just wondering if the business really benefits from clever schemes like this

It is so they can make up the price depending on your face. Pisses me off no end.
