To think this lacks confidentiality and shows a lack of respect?

I was idly googling the school I used to work at and nosying at looking at their website.

They have minutes of full governors meetings on there and there are so many comments about members of staff - not named but obvious to me and anyone else who knows the school who they are!

Things like - 'the head of science did not return these by the deadline. Person X commented this was typical of his dealings with the science department.'

'One English teacher resigned following two unsatisfactory observations...'

(I've rephrased those, but you get the idea.)

AIBU to think this is horrible? And to be so glad I don't work there any more ...

Hmm. The minute-taker obviously doesn't know how to note salient points. Yes, off in the extreme.

To be fair, the minutes should be signed off by the Chair so it's down to them to make sure they're fit for purpose really.
