AIBU to ask you to share your best slow cooker recipes - especially veggie ones

Mines not veggie but you can miss out the pork and add more beans or use veggie sausages instead

Large onion sliced
clove of garlic
belly of pork rashers
tin cannellinni beans
tablespoon mustard powder
2 tablespoons of black treacle
6 cloves
two tins of chopped tomatoes
stock cube

fry the onion and pork and garlic then put all the ingredients in the slow cooker except the beans and just leave to cook. I did this yesterday on the 4 hour setting but obviously it can be left for longer on a lower setting. I add the beans at the end, but if you use dried ones that have been soaked first they can go in from the beginning.

also if you can get a vegetable called kolokasi (also known as taro or eddoes) is gorgeous cooked in tinned tomatoes, celery, and half a lemon and you can also add pork or chicken and works really well in slow cooker.

Oooh, I need to get mine out! I've been craving veggie sausage casserole in the worst way. And Veggie chili.

Chickpeas, tinned tomatoes, onion, courgette, peppers, cumin seeds, a bit of basil... Serve with couscous. Lovely tagine :-)

Lentils, chickpeas, a tin of tomatoes, a couple of spoonfuls of curry paste, garam masala. Tumirik, a touch of chilli - Dahl curry.

Not a veggie one but you could leave out the beef and add more mushrooms:

Stroganoff
500g stewing steak
250g sliced mushrooms
1 can low fat condensed mushroom soup
1 can milk (I just measure it in the soup can)
1 chopped onion
1 pack garlic and herb Philly
Splash Worcester sauce

Put all in slow cooker except the Philly. Cook on low for 8-12 hours (less if veggie version)

An hour from being ready add the Philly and stir in.

I'm a veggie with a slow cooker, tonight I'm cooking sausage and Mediterranean veg casserole- chopped onion, garlic, fennel seeds, basil, oregano, quorn sausages cut into thirds, mushrooms, pepper, courgette, s&p and splash of balsamic, medium 4 hours. I also did onion soup once, chopped onions, herbs and seasoning, bit of wine and balsamic vinegar and veg stock, cooked all day on low

Also, sauces don't thicken up as much in a slow cooker so take the lid off and turn up to high for the last half hour of cooking or add a spoon of veggie gravy powder

I found that barley is quite good for thickening slow cooker stews.
