I have started batch cooking but would like to alternate these with fast meals on other nights so I don't use up 7 batched cooked meals a week! So far I have jacket potato done in microwave with beans, stir fry.......

What else is super fast to cook (15 mins or less)?

This is my ultimate speedy dinner recipe (and really healthy too!):

Super fast prawn noodles: www.bbcgoodfood.com/recipes/10759/superfast-prawn-noodles

Onion, yellow pepper, courgette with either prawns or chicken breast (chopped up). Cook in some olive oil, finish off with some pesto and crème fraiche.

Salmon filet with a raw fennel salad with raisins and blue cheese.

Couscous with spices, mince, feta, mint, parsley, raisins and pine nuts.

Steak with steamed green beans finished off with a knob of herb butter.

Pork chop with raw baby spinach salad with peas, avocado and a creamy dressing.

Mix minced garlic, soy sauce & honey, lay salmon fillets on foil pour over & wrap individually-bake in hot oven
In a pan, stirfry frozen/fresh sliced peppers, onions, mushrooms add some ready to wok noodles, pour over leftover juice from cooked salmon
Pile noodle/veg mix on a plate - place salmon fillet on top - yum
This is tonights dinner!!

Chicken noodle soup - have batch of cooked poached sliced chicken in freezer. Put chicken stock cube in some hot water with some grated or finely matchstick chopped ginger (or some ground ginger!), and use scissors to cut up spring onions into boiling stock with a good spritz of black pepper. Add frozen chicken, sliced mushrooms and noodles (I prefer egg, but could use rice or udon). Simmer for 5 minutes or so until chicken is thawed and hot through. Put some iceberg lettuce (or any crunchy lettuce or pak choi or spinach) in a bowl and pour over the soup. Sprinkle more spring onions over the top! 10 minutes max.

Tuna with a caper and coriander vinegrette. Delia recipe here. While tuna is cooking prep vinaigrette. And nuke some easy rice to go with here

Also apologies if this has already been done, or a variation - but I do this when have no time and always have the ingredients!

Pasta alio olio with prawns

Put on pasta to cook - spaghetti/linguine or anything really
Fry couple of cloves of crushed/chopped garlic in plenty of olive oil and some salt until softening
Add bag of fresh/frozen raw prawns and some cayenne (add more if like it spicy!)
Once prawns cooked - toss in cooked pasta, add more seasoning if needed and serve with bagged/washed green salad and some cherry toms (olive oil/balsamic for dressing)

I love it!

Makes notes

NeverGoOutOfStyle · 13/07/2015 20:01

This is my favourite easy dinner, takes 20 minutes (once you've converted it from american or cook in volumes), throw in some left over cooked chicken if you've got some and some veggies at the end and you're done with minimal washing up. damndelicious.net/2014/10/11/one-pot-garlic-parmesan-pasta/ all her one pot recipes are delicious!

Chorizo and chickpea stew is lovely, served with crusty bread and salad.

pinkisthenewpink · 13/07/2015 22:22

Microwave cooked sweet potatoes.....but to be edible/delicious they need to have lots and lots of butter and cheese. (But you can have it with salad as a yin to the yan of high cholesterol inducement!)

fuzzpig · 06/11/2015 10:36

Even meals that are meant to take 10 minutes usually take me 30. I'm so uncoordinated I mess everything up Blush

I do like my ultimate scrambled eggs though - with stir-fried chorizo, pine nuts, parmesan (or cheaper equivalent usually), red pepper, tomato and if we have it some thin stem broccoli or asparagus.

fuzzpig · 06/11/2015 10:36

Didn't realise this was a zombie thread sorry! It came up on facebook. Still useful hopefully :o

welshHairs · 06/11/2015 10:50

It's a great thread though fuzz so thanks for reassurecting! Grin

DamsonInDistress · 06/11/2015 11:30

Haven't read the rest of the thread but a cheese it toasted cheese sandwich on wholemeal granary, or a poached egg or dry fried egg sandwich on the same is a good balance of carbs, fats and protein.

Salmon. Put teriyaki sauce on. Boil kettle for couscous and broccoli. Fry salmon in the sauce with some olive oil. Job done

Boil pasta

Chop mushrooms

Fry mushrooms add 2 serving spoons of water from the pasta, add 3 spoonfuls of pesto to the pan and mix. Drain pasta and mix sauce in well. Grate some Parmesan over the serving and dish up.

Janeymoo50 · 16/05/2016 15:53

Pan fried salmon, vacum packed rice (2 mins in microwave), some brocolli and sweetcorn in a pan, drain veg when cooked, stir in the heated rice, season (small knob of butter to taste), place veggies rice in bowl add salmon to top.

It's a weekly favourite of ours - I ifteb brush the salmon with some spicy shake mix of some variety too.

Made this on Friday night, 15 minutes easily (less actually).

tinyshinyanddon · 16/05/2016 15:57

Some good ideas here - I have a stunning lack of imagination and my go-to quick meal is mac and cheese. I think I can get it done in 10 mins (still feels like a lifetime when everyone is complaining they're hungry). Not sure if this counts but I do make up Delia's fishcakes the previous night or early if there's leftover tatties and that's quick to cook later plus salad.

lastqueenofscotland · 16/05/2016 16:20

Couple of my fav late night ones

Puff pastry, one of those cans of mixed beans in chilli sauce bit of grated cheese make some cheesy bean sausage rolls.

Chickpeas with pesto, mozzarella and tomato
Fry mushrooms in garlic and chilli add cooked puy lentils and rocket.
