I have started batch cooking but would like to alternate these with fast meals on other nights so I don't use up 7 batched cooked meals a week! So far I have jacket potato done in microwave with beans, stir fry.......

What else is super fast to cook (15 mins or less)?

My boys and I had fish finger sandwiches today with cold sweetcorn from a tin and microwave mixed veg in a bag. Was nice :)

My favorite quick meal is grilled cheese and tomato soup (canned).

Cook gnocchi (about 2 minutes). While it's cooking quickly flake a pack of smoked mackerel fillets and open a bag of pea shoots. If you have chives chop or snip them up now too. Drain the gnocchi and put it straight back in the pan with a couple of large knobs of butter, a twist of black pepper, and a good handful of oatmeal (trust me). As soon as the butter melts, throw in the fish and pea shoots and toss it all together. Picture here. Healthy meal in under five minutes with minimal cooking.

Another smoked mackerel one:

Cook basmati rice (or use one of those precooked rice packs if really pushed for time)
Cook broccoli
Toast sesame seeds
Chop mackerel
Chop spring onions

Mix all together and douse with a bit of soya sauce & sesame oil.

Yum.

smoked salmon pasta:

salmon bits (the cheap off cuts from the supermarket), cream cheese, peas, pasta, dill, lemon juice

Cook the pasta and just before the end add the peas, when cooked stir in the cream cheese, salmon and dill and lemon juice season with pepper.

One of the best quick meals I did was some thin steak, fried quickly and placed in lightly toasted ciabatta rolls with horseradish sauce and caramelized onions (from a jar), with a big salad on the side.

Steak was fried in a non-stick pan with hardly any fat or oil, and it was a little crispy on the outside but pink inside. Yum

I've also done similar with chicken breast cut into slices horizontally, to speed up cooking. In this case I used a smear of pesto as sauce, and added some sliced tomatoes instead of the onions.

A basic idea that you can alter to suit people's tastes.

Very quick/Cheats Carbonara Sauce:

Set pasta/spaghetti to cook.

Meanwhile Put 300g cream cheese into a saucepan with as much grated cheese as you feel you need. Add a splash of milk. Heat gently until all blended (keep a close eye and stir often). Add sloshes of milk as it cooks to get it to the consistency you want.

Whilst doing that dry fry some chopped bacon.

All should come together at around the same time, drain pasta and mix everything in the pasta saucepan.

Throw a salad together and serve.

If you're a marmite person:

Boil spaghetti. When cooked melt some butter in a separate pan, add a dollop of marmite and a spoon of the pasta cooking liquid. Store together. Drain pasta and add buttery- marmite sauce topped with lots of Parmesan. Delicious, savoury goodness in under 10 minutes.

I like marmite spaghetti. I fry some sliced red onions and cherry tomatoes as the pasta is cooking, then add it to the pasta and marmite (cos I don't like meals with no veg).

Philly-bacon pasta:
Slice up a pack of bacon to strips, fry it. Add 300ml of double cream, let it start boiling. Add Philly(or just any cream cheese), stir it well together and add to boiled pasta(tagliatelle or spaghetti is the best).
It's very filling, so first have a small portion.
Also - peas and corn are great with it.

Gnocchi bake with salad and crusty bread.

I quickly boil the gnocchi for a minute or so, stir in some pasta sauce (homemade from the freezer and quickly defrosted in the microwave, or jar sauce) top with cheese and bake in the oven along with a baguette and serve with salad. Kids love it. Saved my life a few times when I've gotten too distracted doing other things to think about dinner Grin

Tuna and pasta
Pasta with stir in sauce
Jacket potato done in the microwave with either cheese and beans or tuna
Pizza - just chuck it in the oven

You can't beat an omelette for a quick dinner. I've chucked anything in the fridge in before, mushrooms, salad bits, broccoli, frozen peas...mixed in with cheese tastes amazing.

Penne pasta
Sauce made from:-
Fry bacon
Add finely chopped onion
Stir in a tub of garlic and herb dip ( kept next to humous)
Stud in frozen peas
Squirt of lemon and fresh mint at the end

Cold chicken salad.
In fact any salad.
We have microwave spuds and salad a lot.

As long as you don't like your steak incinerated steak and salad is good.

I also make big pots of soup. Eat half, freeze half. We have it with garlic bread. Nuke the soup, Garlic bread in oven 15 min.
