I have started batch cooking but would like to alternate these with fast meals on other nights so I don't use up 7 batched cooked meals a week! So far I have jacket potato done in microwave with beans, stir fry.......

What else is super fast to cook (15 mins or less)?

Fajitas are quick to cook but not that quick to prepare (lots of slicing ime).

Tonight was pretty quick

fill kettle, turn it on.
Cut up onions, and garlic, start them frying in oil
cut up mushrooms, add to pan
add dried herbs, salt and pepper
cut up 1 chicken breast per person into thin slices, add to pan and stir
pour boiled water into another pan, add pasta, bring back to boil
return to chicken pan, once all chicken sealed, add tin of tomatoes, stir, put on lid
while pasta cooking lay table
all cooked, serve with parmesan on top

Egg fried rice
Chopped onion, red pepper, broccoli, frozen peas and a tin of sweetcorn which you stir fry then add a cooked micro rice, crack an egg in and stir fast then add some sweet chili and soy sauce. Great for left over chicken as well

Ceaser salad is lovely

Pan fried pork chops with a dollop of creme freshe and mustard with some mash and cabbage

Corgetti Spaghetti is a current favourite

The tubes of garlic, chilli and ginger are good for speeding prep up.

I always keep a few antipasti jars in the fridge (sun dried tomatoes, peppers, artichokes, courgettes etc). Chop up and stir into pasta with a squeeze of garlic. 5 mins if fresh pasta.

Chicken curry: Fry onions, garlic, chicken pieces, spices (cumin, coriander, turmeric, ginger, chilli). Add yoghurt or spinach or tomatoes. Serve with naan. 10-15 mins.

Ham & Cheese Quesadillas - sandwich together tortilla wraps with savoury filling of your choice and pan fry for a few minutes on each side.

Fresh pasta keeps well in the freezer, can be cooked from frozen and still only needs a couple of mins in boiling water

Pasta with nearly anything is quick. (fresh pasta takes minutes. Dried, cook for half the recommended time, turn the heat off,leave in the water with a lid on.)
Our faves are courgette - fry onion, garlic and a tin of anchovies and their oil and add a couple of ribboned courgettes, pepper and parmesan.
Pasatta - Fry manky veg,add pasatta,pesto, garlic, tin of sardines, 1/2 tub philly.

Speedy Quesadillas - Chop a couple of peppers and onions and roast in oven on highest setting with olive oil until charred. Make a quick fresh guacamole (tomatoes, avocado, coriander, chilli, lime) whilst cooking and dry fry two wraps to crisp up. Spread peppers etc onto wrap, guacamole, sour cream/yoghurt, kidney/refried beans and squeeze remaining lime over before placing other wrap on top.

Pan-fried fish fillets or steaks with a variety of steamed vegetables. Takes 10 minutes, and you can make a sauce while it's cooking.

Anything with pasta.

Cous-cous with tomato sauce (not ketchup) and goats cheese.

Make the cous cous (pour boiling water over the cous cous and cover for 3-4 mins as per pack instructions). In the meantime heat up the tomato sauce (you can use pasta style sauces with herbs or more veg) and do a quick flash fry of the thick slices of goat's cheese (the french style one that comes in a roll shape) without oil so that you brown the sides.

You can also use Feta, with the added bonus that it doesn't need frying.

Delicious.

Left over chicken noodles are a bit of a staple in our house. Substitute chicken for salmon and cook for a bit longer if you want to mix it up a bit but you're straying into 20 min territory there Wink

Brown chopped onion in a pan
Add raw veg of your choosing if you want: carrot batons/broccoli florets/baby sweetcorn/mange tout/courgette/shredded cabbage (use a veg peeler to make ribbons for speed)
Add boiling water, tsp chilli and garlic paste, couple of big glugs soy sauce
Chuck in chopped/shredded left over chicken
Add any leftover cooked veg if using
Taste and add more soy/chilli if necessary
Chuck in noodles
Serve when noodles cooked

put rice on to boil...

cook a pack of chopped up bacon and chopped mushrooms in srpay oil then add a tin of condensed mushroom soup.

really tasty

Fry mushrooms and cherry tomatoes. Add seasonings.
Serve on toast. Can add fried egg if wanted.

boil pasta and steam some broccoli and petits pois

tear up some basil and toast some pine nuts while the pasta's boiling

pile up the lot with naice pesto. And stick some chili flakes on it

summer one
turn on filled kettle
walk up garden to pick lettuce, tomatoes, french beans
put beans to cook in half of water, boil eggs in other half
wash lettuce and put into two bowls
tin of tuna between the two, tomatoes quartered
lift out beans, put them round, anchovies, olives
shell eggs, pop on top halved
scoff with fresh baguette and chilled wine
