Hi, I'm in a mad rush - what are the beat cake recipe that can be done quickly? Suddenly remembered its the UK cancer bake tomorrow and I haven't done anything yet!

Weigh your eggs, then the same amount of everything else all together in a bowl. Mix. Makes v passable cupcakes.

I like this banana cake recipe. It's very forgiving o have swapped floor for self raising or half spelt and left the chocolate or if trying to be healthy. Looks impressive decorated with banana cut into length stupid.

Yogurt pot cakes.

I pot natural yogurt (150g)
Use the pot to measure the other ingredients
3/4 pot vegetable oil
1pot sugar
3 pots flour
2eggs

Whisk it all together. I usually add either raspberries or strawberries at the end then cook in cupcake cases for 20 mins at 180degrees.

Mix icing sugar and lemon juice and drizzle on while they're hot.

These delicious bad boys - hardly any ingredients!
