...a restaurant that does not provide a dessert fork with the dessert spoon for pudding / dessert / sweet? It doesn't matter what the pudding is; a fork ought to be there.

I think it absolutely matters what the dessert is. If they went out of their way to give me a fork for a sorbet I'd think they were nuts.

I do ask for a fork, if it's not provided, whatever the pudding is. Even if it's tapioca, I need something in my left hand to stabilise what I'm picking up with the spoon. I should not have to hold the plate / bowl /whatever with my other hand (allowing for left handers here). I was taught that one should not hold the bowl even for soup except when one is tipping it up away from one.

Depends on the dessert and depends on the restaurant - bog standard beefeater then I wouldn't expect a fork; the fat duck, I would think less of them if it wasn't provided.

My seven month daughter can put a spoon in her mouth without needing a stabiliser.

Would you not get a few weird looks eating with both a spoon and a fork in your hands? Do you ever get mixed up and start forking your tapioca? Would two spoons be counter productive?

Using the word tapioca did not mean that I was referring to restaurant menus. If I were to go to dinner somewhere, I would expect a dessert fork. Why were they made if they were not to be available and used. Perhaps I should not be surprised at the number of JK people who think they are not 'necessary'.
