Is better with cheese?

DH disagrees and insists in making tortilla with only egg, onion, potato and black pepper. Angry
I feel quite strongly that cheese improves the whole dish.

Definitely cheese in omelette & frittata. I wouldn't say no to it in tortilla either, personally, but have never seen cheese added in a tortilla recipe, & it is still pretty damned tasty without.

Intrigued by those who cook frittata in the oven. How does that work? All the recipes I have involve starting it on the hob & then finishing under the grill. The oven sounds less faff - what temperature & for how long?

I'd agree with you except on the tortilla, which I haven't had with cheese before. But generally yes - cheese always improves egg-based dishes!

At the risk of sounding very thick, I always thought a tortilla was a little crispy thing - like a Dorito Blush. I didn't realise it could be anything else!

That aside, I'd happily put cheese on almost anything so yes to cheese! Grin

But I meant the spanish omlette thingy.
Crispy corn tortilla - just not eggy or controversial enough for ths thread.

Loonvan, there is or used to be a recipe in the recipe section on here for an oven-baked frittata. I think it was about 180°C for half an hour or so.

Cheese has a funny squidgy texture.

Cheese-derived flavours are OK. Crisps, for example. Anyway, sorry for thread derail Blush

Definitely no cheese in tortilla de patatas. Goes well with aioli (garlic mayo). If you put cheese in all these things, they all end up being the same imho.

Most things are definitely not improved with cheese IMO.
A bit of cheese is sometimes a nice addition but mostly it just turns something lovely into something a bit greasy and gloopy.

Having had my Spainsh au pairs tortilla which is just egg and potato I old say cheese would spoil the gorgeous texture and flavour.
