To think that omlette/ tortilla/ frittata......

Is better with cheese?

DH disagrees and insists in making tortilla with only egg, onion, potato and black pepper. Angry
I feel quite strongly that cheese improves the whole dish.

For me, tortilla should be mostly potato with egg used as the binding agent, whereas an omelette is more egg-based with other stuff dispersed through it.

I thought a tortilla was an omelette, but a tortilla espanola was a Spanish omelette? As for a frittata......?

In my world, tortilla = tortilla espanola/tortilla de patata.

Omelette - cooks in a matter of minutes, add anything
Spanish tortilla - a thick potato omelette takes 30+ mins to cook, flip once halfway through by sliding onto a plate. Eat warmed up for breakfast with a café con leche yum!

Omelette is first stirred, then folded, never with potato.
Fritatta/tortilla is flat, finished in the oven, and has potato.

Cheese is welcome in all.

Frittata is Italian, tortilla is Spanish. Frittata can have cheese, tortilla never does.

Most things are improved with cheese - and to hell with authenticity!
I don't care where a dish originates from, I'll add what I like to make it taste good.
I like to put chunks of brie in a tortilla. I am not a purist when it comes to food.

Since you don't stir a tortilla, you can easily just put cheese in your half, and leave the other half bland unadulterated.

We actually call it torta patata. We use potatoes, onions, bacon, as the basic. Hot one day, sliced cold for lunch or picnics the following day. No cheese, ever! Grin

So i went and got the classic spanish cookbook 1080 recipes by simone and ines ortega off the shelf and looked up the chapter on tortilla, and it is translated as omlette in the chapter heading.
Here are some of the recipes
tortilla souffle con perejil o queso (with some sort of cheese)
tortilla con queso rallado. jamon y cuscurros de pan frito (with some sort of cheese and pan fried)
tortilla de jamon (with just ham)
...
tortilla de patatas a la esponola (what we classically think of as spanish omlette, no cheese)

so the tortilla is an omlette just the spanish translation.

My understanding, which may well be wrong, is a frittata is basically an oven-baked omelette. IMO, cheese is fine in omelettes and frittatas, but not in tortilla espagnol.
