Need ideas for dinners for me and DP as we kind of stuck in a rut eating same dinners every week. We have a young baby so simple ideas is best for me!

Fry lardons/pancetta
Add garlic
Add 200g brown or green lentils
1 tin of tomato
Add a liter or so of bouillon
Near the end add tiny pasta (orzo or similar)

add parsley, salt, fresh ground pepper,

Serve with parmesan & olive oil

Easy vegetarian option:

sautee sliced leeks & mushrooms
add
kidney or butter beans
tin of chopped tomatoes
mixed herbs & some stock
Worcestershire sauce
garlic (optional) & seasoning

serve with cheesy dumplings (you can get veggie 'suet') or crusty bread.

Aubergine, Mozzarella & Tomato bake -

Slice some aubergines thinly lengthways, drizzle with olive oil (I sometimes sprinkle with some italian herbs) and bake in oven for 20 mins.

Once baked layer up in ovenproof dish with a jar of tomato pasta suace and some torn up mozzarella i.e. aubergine/tom sauce/mozz & repeat. Sprinkle with grated parmesan and breadcrunbs and bake for another 10 mins or so until heated through.

Serve with green salad. Lovely, cheap, tasty....

Roast chicken pieces/legs with sliced courgette and sliced lemon, some thyme and butter/oil.
Steam and mash some sweet potato, adding butter and a little brown sugar-delicious with the chicken, the courgettes soak up the chicken juices and the lemon adds a little excitement!

Peel potatoes and cut into very small chunks so as they boil quickly. Ditto a couple of carrots and a handful of frozen peas. Lightly poach fish (co-op do packs of mixed salmon, cod and smoked haddock) in a bit of milk, seasoned with salt and pepper. Mix in carrots and peas with the fish, put in a casserole dish topped with the potatoes, mashed with a dollop of cream cheese, and sprinkle with a bit of grated cheddar. Pop in the oven for about 20 minutes until cheese bubbles, and while it's in there, boil or steam some broccoli or veg of choice to accompany. Takes about 35-40 minutes from start to finish, so not super quick, but it's a favourite here :)

Brown sausages in a pan.

Chuck them in a slow cooker with a tin of baked beans, tin of chopped tomatoes, bit of basil, sage and pepper. 100 mls beef stock.

Cook on high for six hours. Serve with mash.

the day you make spag bol make double the sauce and then the next day put the sauce in a marrow, bake for 30 mins bobs your uncle

basic tomato pasta
chop and fry onion
chop and fry courgette/aubergine/ what ever veg you ahave going
add carton passatta

boil pasta

25 mins later fresh homecooked dinner ready

Fry....

Add half a jar of sun dried tomato pesto

Stir in cream / creme fraiche at the end

Serve with tagliatelle

Ooh, another favourite! Put some pasta on to boil, fry up some chopped onions, mushrooms and sweetcorn. When soft and browned, add in a tin of tomatoes, some seasoning and a tin of tuna, then mix in with pasta. Pop in a casserole dish and top with grated cheese and some broken up tortilla chips and wait until cheese bubbles.

Gently fry red onions and flat leaf parsley in a pan, add half a tub of mascarpone cheese, add 2 crushed garlic cloves. It should all melt into a sauce.

Leave to stand for 20 minutes

Get your chicken breasts, make a "pocket" in them then fill with the sauce (this will be messy). Wrap some parma ham or bacon round the chicken and hold in place with cocktail sticks.

Put in the oven at 190 for about 45 minutes. This is beautiful with mashed sweet potato and green beans.

I always experiment with filling chiken with random cheeses etc :D

My DH's favourite quick meal (which I now do too) is as follows:

Ingredients: basmati rice, smoked mackerel, broccoli, soy sauce, sesame seeds

Method: cook rice, cook broccoli, microwave mackerel

Serve: put all things on plate and sprinkle liberally with soya sauce & sesame seeds.

Takes 10 minutes and is way more delicious than it sounds.
