To steal your fave easy dinner recipe (if you tell me please)

Need ideas for dinners for me and DP as we kind of stuck in a rut eating same dinners every week. We have a young baby so simple ideas is best for me!

Not a recipe, but a very useful tool for collating all these recipes is Pepperplate They have apps too and I use it for meal planning. You can add keywords like guests, quick, camping so you can search them easily by type too.

I'll be adding a lot of these.

Nottalotta I do a similar recipe but with added sweet chilli sauce too. It gives it a real lift.

Fab thread! Making me hungry and for once looking forward to doing next week's meal plan and grocery order :)

I love a good tray bake, chicken thighs/legs with chopped potatoes, chorizo, red pepper and red onion. Shove in the oven and forget about it until the chicken cooks.

On a similar note, a really easy soup: roast sweet potato, red onion and red pepper in a tray, then whizz with a bit of stock. Perfect.

Chilli - also slimming world this one

Fry onion and 2 chopped chillis, with paprika, cayenne pepper and other seasoning of your wish
Add your mince beef and fry until browned.
Add a tin of chopped tomatoes and a squirt of tomato puree.Simmer for 10mins You can add some stock here but I tend not to, if you do simmer for 20mins longer..
You can add kidney beans then and simmer for a bit longer.
Taste it, decide if it needs more seasoning

I serve with rice and sometimes wraps to make burritos

Am definitely going to give the pulled pork a go.

Roast chicken thighs and drumsticks, takes about 45mins, serve with veg and jacket pots, or par boil potatoes and bung them in with the chicken bits, you get a quickish version of a roast. Make your own gravy or use the granules (but not if you are giving the gravy to baby, granules are too salty).

I have made this very quick, and lazy, veggie lasagne before and it was more popular than the meat one. Serves around 6-8 I think.
Two bags of frozen roasted mediterranean veg, I use the Tesco one, or just use any veg. You do need quite a lot as it cooks down.
Large jar of Ragu or shop's own brand one (can't bring myself to buy D**mio because of the horrendous adverts)
Two big tubs of fresh cheese sauce (you might not need all of it but nothing worse than a dry las)
Cheese for top if so inclined.

Cook veg with ragu sauce then make up the lasagne and cook for 30mins or according to instructions.

I accept that this isn't the cheapest way of making a lasagne but it's certainly quick and pretty delish. If you have more time, obviously you can make the cheese sauce, and use fresh veg and make your own sauce with tinned toms. I normally use a jar of Ragu though when making las, it seems tastier.

Fry off some diced chicken breast. Add onion, courgette and red/yellow peppers. Add generous amount of pesto and small amount of creme fraiche. Serve with crusty bread.

Cook couscous or bulghur according to instructions. Add cinnamon and tumeric, olive oil, feta, fresh mint and parsley, raisins and pine nuts. Add some sausages if you want some extra protein.

Toasties with cheese, ham and a fried egg go down well here.

Fry off mince with onion, garlic and mushrooms. Add frozen spinach, tin of beans and passata. Add some mixed spice, oregano and a pinch of chilli flakes and little cream. Transfer to ovenproof dish. Top with broken tortilla crisps (plain flavor) and some grated cheese. Bung in oven at 180 and bake till cheese has melted.

Cheat's satay - mix peanut butter (I like crunchy), sweet chilli sauce and soy together. Chuck on some stir fried veg/meat and serve with rice or noodles - I like buckwheat Optional squeeze of lime & black pepper.

600ml of soup(fresh,tinned or homemade, best if it's not a smooth one but doesn't really matter) large tin of beans( any kind) and a garlic baguette. Heat the soup up, put drained beans in oven dish and pour soup over. Put half gaelic baguette in food processor and blitz to breadcrumbs. Sprinkle over the bean mix and bake for 20-30 mins. Serve with veg or salad and other half of baguette. So cheap and easy!

For really easy no-chop quick-cook I use those Iceland Mediterranean frozen veg bags quite a bit.

Can be added to frittatas, pasta sauce or pasta bakes, or add to couscous and serve with fish which doesn't take long to fry. The veg isn't obviously anywhere near as nice as doing it yourself, but for a quick dose of veg it makes a nice change from my standard frozen green veg.

I often do similar to the chicken Boursin one a few pages back, it also works well with garlic and herb Philadelphia. You can use leftover roast chicken or raw. It can be served with rice, pasta, or jacket spud topping.

Chicken & mushrooms into the pan. Glass of wine, reduce it off. Large glob of the herb Philadelphia, others no right amount. Let it melt, add water or stock if it's too thick. Handful of frozen sweet corn in right at the end, let it heat through.

If you don't want to use wine then use veg or chicken stock. I like the low salt swiss bouillon. You don't need mushrooms, finely chopped carrot, or peppers works too. It's one of those you can dress up with wild mushrooms and fresh parsley , or serve simply.

Fish in Tomato Sauce with chorizo

Fry an onion
Add tin chopped tomatoes, chopped chorizo, chilli flakes (if you like a bit of kick)
Add white fish - I always have a bag of frozen white fish in freezer
Simmer till fish cooked, serve with rice

Optional extras - a hard boiled egg per person added to sauce just before serving
Chopped coriander to serve
Green beans also nice with this

Smoked Salmon & Pea Pasta - delicious & v quick

Soy Salmon with Noodles -

Place salmon fillet skin side down on large square of greeseproof paper, drizzle over a little olive oli, splash of soy sauce, red/orange/yellow peppers choped into strips, some chopped spring onion and a dod of lazy ginger.

Wrap up parcel and bake for ~ 20 mins. Serve with noodles tossed in soy and some mangetout.
