to leave a veggie curry out of the fridge for 24 hours?

Thinking of making a butternut squash and chickpea curry tonight, to have for dinner tomorrow. I was planning to make it and just leave it in the pot on top of the cooker until tomorrow evening. Will it be ok out of the fridge?

I do that with veggie curries - and soup. We've not died yet Smile

I would.

My mother makes killer (in a non-fatal way) stews, with meat and everything, and leaves them standing about for a couple of days. No one has died in 50 years.

Reheat to nuclear, and you're good to go.

I do this with loads of veggie stuff, we're all okay :)

Be fine. Just make sure it's proper boiling before you serve it up.

Total top-of-the-head stuff expat

Slice and fry 2 onions in veg/groundnut oil for 5-10 mins
Add 3 cloves garlic (sliced) and as much chopped green chilli as you can handle!
Add spices: I used 1tsp turmeric, 1 tsp brown mustard seeds, 1 tsp ground coriander, 4 smashed cardamom pods, 1 tsp nigella seeds
Cook for 1-2 minutes
Add tin chopped tomates, fill the can with hot water and add that too
Bring to boil and simmer for about 10 mins
Chop up butternut squash, add to curry base, mix well and cook on medium heat for 20-30 mins
Add a can of chickpeas and heat through
Chuck some coriander over the top

Leave on hob for 24 hours and hope it doesn't poison you (joking Wink)
