I CANNOT make carbonara and Im considered a very good cook. I tried carbonara after reading about it on mumsnet,have tried it 4 times so far and its awful!!!! WHY CANT I MAKE IT? WHAT AM I DOING WRONG ?

How on earth can you make carbonara without cream? (I would genuinely love to know as it's one of my "bugger, it's way too late to make the meal I had intended" fallbacks but it's not exactly a healthy option).

I don't use cream in mine (DH does though but mine is way better :o) - I use egg yolks, add a handful of strong cheese to the egg mix, drain most of pasta water,but keep a tiny bit back. Take pan off heat, then mix all together with the bacon and Bob is your mother's brother.
