To think that one should put the cream on first?

On scones that is.
Because surely the cream creates a delicious fatty barrier, thus preventing the jam (raspberry of course) seeping into the sconey cakiness?

And we can do "scon" vs."scone" too, if anyone's up for it.

Cornish way is scone then strawberry jam then clotted cream.

Has to be jam first that you spread, then a huge great lump of clotted cream plopped down on top.

If you put the cream on first then try and spread out the jam on top, you might lose some of the cream over the sides - unthinkable.

Guess which bit if the 3 layers I like best.

moving to somerset soon. Note to self to do extensive West country research on this subject

you have to put the hardest thing on first and the softest thing on last. otherwise it will squash out.

so clotted cream, if you have it, before the jam.

if you're using something soft like whipped or double cream, it has to go on top.
