we have them quite often, but to know that this evening all I have to do is cover my table with loads of toppings, fry a few crepes and pancakes and THAT IS ALL - dinner sorted!!! I am smiling already!

I was but now I am :( as the Telegraph have moaned at everyone using a packet mix. I know it is bad but it makes me feel more secure about my chances of making something that does not resemble burned vomit.

I will make them properly for dinner but I used one of those just add water shaky ones this morning, Just don't have the time in the mornings.

Have to say I don't get people who buy packet mixes Confused. I saw one at the weekend that said "add egg and water" so its flour and milk powder in a box then.....?????

Its SO easy! But a proper crepe/pancake pan helps (not expensive!)

I make thin crepes and DH tends to make thicker american style ones, both are yummy tho! CAN NOT WAIT!! WOOP WOOP!

shaky mixes are great for kids to make them too. And burnt vomit is mostly how my pancakes look. A friend has a pancake party for neighbours and anyone who can't make their own wants to drop by. My DCs love it more than I do TBH. Anyywayyy - diet starts on Ash Wednesday, no?!

Strenua I realise this and I have no idea why I am unable to make pancakes using flour, milk and eggs, but they do look sad, wilted and ummm... disgusting... when I try.

If I see one more person bemoaning the use of packet mixes I will scream. If you don't get why or don't like, don't use them, whining about other people using them makes you look like a twat. It could not possibly be off less importance.

I do both English and American, too. DH likes stacks with bacon and maple syrup a la IHOP while I'm a lemon and sugar gal.

We have no idea if DS will actually eat any... he turned his nose up last time! Maybe I can tempt him with cheese crepes...

On making them, the English/crepe ones get made from scratch. It's not exactly hard to stick 4oz P flour, 1/4pt milk, 1/4pt water and an egg in a bowl and whizz it. As a child I used to sit there with a batter whisk doing it the old way - well in centre of flour, gradually mixing the egg in with more and more milk. But then it was usually for Yorkshires and we had them every week no matter what the roast.

American ones are trickier. I've tried just substituting SR flour but they still end up flat. I finally asked a New York friend how they make them in the US. Her answer? Betty Crocker mix!
So now we buy a packet of that and get nicely risen ones (yum)

I'm looking forward to using a recipe given to me yesterday that involves sliced bananas and mars bars melted in the folded pancake. Grin

That sounds like more work than making normal dinner to me - you can only make one pancake at a time and it takes forever to make enough to actually feed people.

AKMD I have a pancake mix thing in the cupboard that I just have to add water too and when if that fails dp will buy some on the way home from work!

sixlostmonkeys DH uses THIS recipe but doesn't grate apple into it every time as its quicker not to and they are perfect every time.

unless its your money, why care? And since you can get a packet of mix in tesco that costs 15c, its actually miles cheaper than buying flour and milk etc. I bought a packet as I broke my weighing scales the other day, and they taste just fine.

TrillianAstra 4 american style per pan or one crepe per pan admittedly, but then I put them in the oven, and within 15 mins, have mountains of them, still fresh and hot and lovely

Buzz I didn't say I cared. I said I didn't get it. I have never seen a mix in Tesco for 15c here, but then I don't look for them, just notice the ones they have around checkouts etc this week...

I do feel a bit snobby about pancake mix, but I'm sure some people who use it feel equally snobby about some of the things I do, so that makes it kind of ok Smile

I was - until I discovered that my OH had taken all my eggs to work. Doesn't sound dramatic until you realise that these are FRESH eggs laid by our two hens. I have been out twice now and begged them to lay some more for today - but they don't seem to appreciate the problem.... [hmmm]

I think it's just a shame to use pancake mix because it's so fun making it from scratch. That's the best bit about cooking for me; haing a bowl of wet ingredients, adding heat and watching it turn into something yummy to eat. I feel very clever every time I manage it Wink
