to be excited its pancake day

we have them quite often, but to know that this evening all I have to do is cover my table with loads of toppings, fry a few crepes and pancakes and THAT IS ALL - dinner sorted!!! I am smiling already!

Well DS and DH are going swimming tonight while i do uni work!! So we'll be having pancakes here for supper! I confess however i have one of the shake mixes!!

DD1 (4) came bounding down the stairs, wished everyone a 'happy Pancake day' and then got miffed because she doesn't get the day off.

And she doesn't get to give up school for Lent, either!Grin

SofaQueen - Sainsbo's have started selling a Dr Oetker Double Action Baking Powder. In fact its the only one they sell online now.

We have friends round for tea so the DC will all have a go at making their own for pudding. Some with honey, some with lemon and sugar and some with nutella.

A few times a year, we have sultana buttermilk pancakes, which are like the US ones. They are gorgeous and the accompanying lemon butter divine.

Here's the recipe, which I got from Sainsbo's mag last year.

sultana buttermilk pancakes

serves 4

225g self raising flour
1 tsp baking powder
generous pinch ground cinnamon
2 tbspn caster sugar
1 x 284ml carton buttermilk
2 large eggs
40g sultanas
butter and oil for frying
optional maple syrup for drizzling

for the lemon butter
75g soft butter
zest 1 lemon
1 tbspn soft brown sugar

Sieve flour and baking powder into large mixing bowl and stir in cinnamon,sugar and a pinch of salt. Make a well in the middle. Lightly beat buttermilk and eggs in a jug, pour into the well, then whisk using a ballooon whisk into flour until smooth. Stir sultanas in.

For lemon butter, beat ingredients together in a bowl.

Heat a tablespoon of oil and small knob of butter in a large frying pan. When sizzling, add 1 tablespoon batter for each pancake. Cook 5 or 6 at a time, spaced apart as they expand a little as they cook. As soon as bubbles appear on the surface, flip and cook the other side cooking for 4-5 mins in total. Continue to cook in batches adding more oil/butter as necessary.

Pile em high and drizzle with syrup and blobs of lemon butter.

Yummy spicy spinach and green chilli pancakes Smile

Probably for those with teens or empty nesters but we love them so here you are:

1 cup rice flour. 1 cup plain flour. 3 eggs. milk enough to make a batter that flows off the ladle. washed spinach as much as you like. one finely chopped green chilli. quarter teaspoon of turmeric. salt to taste.

Mix the above into a nice batter. Put a pan on the fire until it is hot enough for oil to sizzle but not burn. Add a tablespoon of oil. Add the mixture to cover the pan. Turn over when one side is cooked and cook a bit more. Eat with yoghurt. Yum.

I would love it if I could manage to eat one - DD has just scoffed 3 in a row, and every time I think it's my turn she asks for more - she's not a big eater so am making the most of it Smile

Hampstead pancakes Grin

These are a take on the crepes made in a stall opposite Hampstead tube station.

1 cup buckwheat flour. 1 cup plain whole meal flour. 2-3 eggs. Milk enough to make a bater that flows off the ladle. Do not add any salt or sugar as then the bater can make sweet or savoury pancakes. Mix well and rest while making toppings.

Toppings: These depend on your family; we make fried mushrooms, sliced mozzarella cheese; grated emmental cheese; sliced raw tomatoes; sliced leeks cooked in a pan with butter till tender; raw spinach. Set aside toppings individually in bowls.

Heat pan till oil sizzles but does not burn. Ladle in pancake mix and spread and cook till just set then toss and cook second side then toss again and add in toppings of choice, adding salt and pepper on top with a salt and pepper mill to taste at this stage, and cook some more till pancake is hot through. Delicious.

Sweet pancakes: same mixture but once the first side is cooked add in juice of half a lemon and sprinkle on loads of brown sugar to the second side then turn over to cook so that the sugar melts in with the lemon. Divine.

I'm working this evening, so have made the batter and put in fridge for DH to make pancakes for DCs. Not holding out much hope for some being left for me. If there is, am def having lemon and sugar. yum

We usually have savoury pancakes to start and then sweet pancakes for pudding.

I am so rubbish at pancakes (in 30 years of cooking I have never produced an edible pancake), that I have been thrilled to use readymade pancakes the last couple of years. My family are very relieved.

Got two packets of ready-made from Iceland on the North End Road. Will put the pan on at 5pm and heat them up. Nutella and squirty cream et voila! Perfect. Well, my son and his 11 year old mates likes them. Less of a Domestic Goddess, More of a Slave Driven Mum.

I love pancakes! We are having a 'feast' later. I have 12 different fillings ready just for us to dig in! Hope it encourages DD to eat something!

Love pancake day.I have collected the eggs from the hens and themix is ready for the children comming home from school.
Savory to start then sweet.

these are little sweet pancakes and never fail give them a go if you want small pancakes.Makes loads

8oz salf raising flour
4oz sugar
1tsp baking powder
1 tsp cream of tartar
2 or eggs
Enough milk to make a thicker than cream consistency
butter for cooking

I'm being a bit slated on another thread because I've said I invite my friends round for Pancake Night (we have no kids between us). Apparently Pancake Day is 'for kids'. I know a lot of you on this thread are talking about it in terms of doing it with the kids/family, but is it REALLY childish of me and my mates to have a Pancake Night for grown-ups?!?

Mmm, drool! Cannot wait for DH to get home. I can make pancakes with a recipe, but he can make the batter without one, just by guesstimating quantities, and so I tend to let him do it. I also always burn the first one. I don't want to eat leftover chicken curry for dinner - I just want to stand by the cooker eating hot pancakes as they are made!

Best toppings: lemon and sugar OR golden syrup. Mmm. I am tempted by the Nutella idea, though.

dangling, no, one of my friends hosted a Pancake Night last year - none of us have kids yet. What are we supposed to do, just ignore it? You can't feed babies pancakes either, so why should you only be able to have Pancake Day when you have kids between the ages of what, about 8 months, and 18?

Had some fab pancake nights as a student. Usually involved carry-out real ale from the pub. Pancake Day is definitely not just for kids.
