Making wheat-free pizza dough?

We're having a party and one of the guests is allergic to wheat, so I was wondering how to make a wheat-free pizza dough (using a breadmaker). Can I just substitute spelt flour or some other flour, or does anyone have a good recipe?

I went through a phase of being wheat intolerant due to stress pre-wedding so I was making wheat free dough (in my bread maker) I basically used a regular pizza dough recipe but used Doves Farm Gluten and Wheat Free Bread Flour instead of regular flour and added a big pinch of mixed herbs and lazy garlic to the mix. They weren't bad really even for non-allergy people.

If you are making regular dough too make extra super sure there is no cross contamination and there is no gluten or wheat in anything that goes on or near the pizza.

Anoither good tip is the Dietry Specials range. They do wheat-free pizza bases ready made or actual wheat free ready made pizza. Asda's seem to be the biggest stockest but I think it depends on the area you live in/demand.

In Waitrose (not sure which other supermarkets stock it) you can get this brazilian cheese mix pizza base (green box in the Free From section). Makes fantastic pizza bases - even my not gluten free DH loves them

Thanks for all the tips... unfortunately we are in Luxembourg so don't have the UK brands, but will see what we can find.

My son has a dairy allergy, so I'm pretty aware of contamination issues

Just use Luxembourg brand wheat free flour in place of regular flour then.

I'm going to give this a go in my breadmaker for DH. He usually uses the cardboard gf pizza bases. he had a gorgeous gf pizza in Florence recently and it made him v happy.

Weta The best non wheat flour is Kamut.
It does'nt have the random stuff in it that the gluten free flour does,

It makes fab bread and cakes and can be used in the same way as wheat.

I live in France for 6 months of the yr. and we can get it here in the organic/health food shops no probs.

I haven't seen wheat-free flour in the supermarket, though DH normally does the shopping so I haven't really looked
