Gluten free pancake tip

DH is coeliac and mostly we use Dove's Farm GF flour, which happens to make excellent thin crepe style pancakes.
However, it is not so good for the thick American/Scotch pancakes- the mixture tends to run everywhere.
The other day I tried the Dove's Farm GF bread flour to make American style pancakes and it worked brilliantly. In fact, I think they were a bit nicer than ones made with wheat flour

Thanks for this - my dh makes American-style pancakes and I don't think he uses the bread flour, just eggs, milk and a shedload of sugar!
