Starting cheese next week

Hey there!
I was wondering if anyone had any advice on starting the cheese step on the milk ladder. I was told by the dietitian that we should give melted cheese first however after looking online everywhere says to give raw first and then I can give melted so I’m just unsure of where to start with it.
I’ve tried contacting the dietitian however I never get a phone call back when I leave a voicemail and sometimes they just don’t answer and the phone will cut off.
im super worried about starting the cheese step as I obviously don’t want to make my daughter poorly, but she’s seems to be managing on the other steps the only thing I’m sceptical about it that her eczema is trying it’s hardest to make a return but her poops have all been fine so I’m also unsure weather or not I should even go up a step or if the eczema is a seasonal thing as she was really bad with it last winter and it seemed to completely disappear over summer.
any advice is welcome 🙏🏻

I have CMPA. If her eczema is returning it doesn't sound as though she's coping with dairy to me Flowers
