Child with nut and coconut allergy - hotel resort recommendations

I’m looking for any experiences and recommendations for hotel resorts in Spain. Our child has allergy to all nuts and coconut (which isn’t a listed allergen as not technically a nut).
We are looking to travel to a family friendly hotel resort which would be a safe option.

How serious is your child's allergy? If a risk of death, I would quite frankly not eat food prepared by anyone else, no matter how much they claim to be allergy friendly or have successfully looked after others in the past. It takes one human error, over tens of thousands of meals produced every year - mistakes will happen.
I'd go self catering and buy food from a supermarket.

If it's an allergy that causes stomach pain for a day, or similar, that's a different ball game obviously.
