Egg free birthday cake

It is my DS's first birthday party this weekend and I wondered if anyone had a good egg free cake recipe they could recommend?!

Sponge cake

8oz SR flour
2teasp Baking powder
6oz caster sugar
8fl oz water
1teasp vanilla extract
jam to fill

preheat oven to 180 c grease 2 8inch tins and line them with parchment
sift flour and baking powder stir in sugar
add water oil and vanilla extract and mix well with a wooden spoon until smooth
divide between 2 tins and bake for 25-30 mins until golden or sponge springs back when lightly touched
Allow to cool before turning out. Fill, decorate and serve

Its a bit heavier than a normal "egg" sponge - more like a sponge pudding consistancy, but perfectly edible
