How to test for allergies/sensitivities ?

My 10yr old was dairy intolerant as a baby, we gradually reintroduced dairy products from about 3.5yrs, but he is always snottery and has problems reguarly with his eyes itching and watering. Last week he developed an urticartica (sorry about spelling) rash and Gp has suggested a blood test, but what will a blood test show ?

pleased you've got that progress! dd1 has had urticaria for years now, at times she comes up with huge white welt marks and bright red all over, yet they won't test her!

I know, I have asked so many times before, maybe its his age now, my gp seemed to think he would grow out of it.
