Your best egg-free pancake recipes

Yes, I know Shrove Tues isn't for a few weeks yet, but am planning ahead this time following a last minute birthday cake panic

Your best tried and tested egg-free pancake recipes would be very much appreciated by my allergic DD.

Sweet or savoury. Quite fancy a pancake main course, followed by a pancake dessert

HAve you tried using your normal recipee substititing egg by an egg replacer like Orgran No Egg?

I have never been able to do decent pancakes but then, having to avoid wheat, milk, eggs etc.... fat chance!

I haven't tried anything yet. Though I tried Orgran in the birthday cake, and it was more like a birthday biscuit

I am no great shakes in the kitchen department though, it could have been something I did wrong

Tesco sells a buckwheat pancake mix (I think that it's made by orgran and we've been able to buy it in health food shops). It is everything free and you can mix it with just water and oil...and it works. Our dd2 enjoyed them last year when she wasn't allowed wheat, eggs, soya or dairy

They also do a really delicious apple and cinnamon one, highly recommended by my kids (and me)! Although it does have soya flour in it. It's dairy/egg/gluten free though.

Chickpea (also called Gram) flour and water. They do have a strong flavour, but if you like them they are easy and very healthy.

You can get it from health food shops and fron Indian supermarkets - its also used for bhajees.

We like them with ratatouille, or with raspberries and melted chocolate.

This is a great recipe for sweet pancakes taken from a fab booked called "veagn with a vengeance" by Isa Chandra Moskowitz.

150g plain flour
2 tsp baking powder
half tsp salt
1 tsp ground cinnamon (optional)
2 tbsp any mild tasting vegetable oil plus oil for the pan
5 tbsp water
300ml plain rice or soy milk
1 tsp vanilla extract
2 tbsp pure maple syrup

Sift together dry ingredients. Combine all wet ingredients in a separate bowl. Add wet to dry, mix until combined but do not overmix or the pancakes will be tough,

Oil a large frying pan and pre-heat over a medium heat for about 2 minutes. Cook & Eat!

Same as a normal pancake mix but instead of egg add 1/2 bannana or mango, both excellent binders

Also thinking ahead for DS who's allergic to egg and 10 months... first pancakes... yum... Found this on the internet but haven't tried it... planning to soon, let me know how you get on! (very sorry can't do the fancy link thing!)
1 cup all-purpose flour
1 teaspoon sugar
1 teaspoon cinnamon
2 teaspoons baking powder
1 cup whole milk
1 tablespoon vegetable oil
1 tablespoon water
1 teaspoon vanilla extract
2 tablespoons butter

1. Combine dry ingredients and mix slightly.
2. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.
3. Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.
4. Return pan to stove and stir butter into batter.
5. When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.
6. Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.
7. Note: This recipe also works well with whole wheat flour. Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat.

I tried corals recipe tonight, with partial success

They came out a bit rubbery, like drop scones iykwim? Perhaps I overmixed?

But they are really just a vehicle for sugar and lemon aren't they, and they tasted dentalcavitytastic

May experiment some more to perfect my technique.
