Egg free first birthday cake recipe?

Anybody got any good links or should I just use an egg replacer product? Still haven't had my DD skin prick test so can't give her egg. How am I going to stop her wanting to eat cake at all her little friends and her cousins first birthday? thinking of making up a cake for each party for her so she feels like she is having one - is this a bit mad?

When DS was small (he has multiple food allergies) I used to send him to each party with "safe" versions of the sorts of things the children would be eating. You could bake one cake and freeze individual portions rather than bake one for each party - but at this stage she might be happier with a whole cake for each one!

Egg replacers tend to be mostly soya flour. An easy way to make cakes egg free is to add one heaped tablespoon of cornflour and three tablespoons of water for each egg. The cake will be slightly less fluffy but it does work well.

On sites such as www.allrecipes.com you can search for egg free recipes:

Hope your DD has a great time.

Thanks DD doesn't seem to react to either soya or corn although I'm allergic to corn so am a bit nervous. Will look up the recipes, I wish I knew for sure whether she is allergic or not I just can't risk it.
