Egg-free Chocolate cake

Hi,
My DS is going to be 2 next month and he's allergic to eggs and nuts. Do you know a receipe for a nice egg-free chocolate cake? Very much appreciated, thanks!

You could try this:
115g raw cane sugar
4 tsp cocoa or carob powder
1/2 tsp salt
170g whole wheat flour
3/4 tsp baking soda
90ml veg oil
1 tsp vanilla extract
2 tsp cider vinegar or wine vinegar
200ml cold water

  1. Mix thoroughly the sugar, cocoa (or carob), salt, flour and baking soda in a mixing bowl.
  2. Add the oil, vanilla extract and vinegar and pour cold water over.
  3. Combine well with a fork but do not beat.
  4. Pour into two oiled cake pans and bake in a moderate oven (350F, 180C, gas 4) for 30 mins or until the cake springs back when lightly pressed. Leave to cool.

Add topping as desired etc

egg replacer works quite well if you want to use a normal cake recipe

Egg replacer is exactly what the name suggests - something that you can use as a replacement to egg in recipes requiring eggs. (no shit!)

There are different brands of egg replacer you can buy in health food shops - a good one is the imaginatively named "No Egg".

Otherwise we have a recipe for making your own egg replacer from store cupboard ingredients that you are likely to already have. can dig it out if you want.

Microwaveable egg-free and milk-free chocolate cake

(A cup is 240ml. I use a baby bottle to measure!)

1 1/2 cups plain flour

1 cup sugar

3 tablespoons cocoa

1 teaspoon baking powder

1/4 teaspoon salt

1 cup cold water

1/3 cup vegetable oil

1 tablespoon vinegar

Combine all the dry ingredients. Add the water and oil and mix. Microwave on high for 8-10 minutes.

It comes out very light, and a bit like a commercial chocolate cake, but more chocolatey. And very quick.
