Picky 5yo coeliac - what's on your menu?

I am mum to a 5yo coeliac DD, who was diagnosed young (18m) and who I'd say, while not being a total fussy eating nightmare, is a bit pickier than average. I'd love to get ideas for new foods for her to try, if anyone cooking for a coeliac wants to share their menus. Here's ours:

Breakfast: Oat pancakes with nutella, fresh fruit, yoghurt

Lunch: usually packed lunch, made up of GF bread, babybels, raw veg, fruit and yoghurt.

Dinners:
Roast dinner
Sausages and chips
Fish Fingers and chips
Chicken Schnitzel and corn on the cob
Chicken curry and rice
Spaghetti meatballs
Gnocchi pesto
Veg-wise she eats peas, carrots, brocolli, sweet corn, peppers, cucumbers, tomatoes

DD really clings to the familiar with food (will not conscience mashed potatoes, cheese). She's very wary of anything new, and although she'll try something new, she will hardly ever eat more than three bites before declaring it off the menu. I suspect very strongly that she's playing for control, and I'm torn between pushing her to try new things (I want us to eat together as a family, but my husband and I are bored of the same few meals all the time) and letting her be (I don't want to give her any more anxiety around food than being a coeliac already provides). Anyone out there know where I'm coming from? Any advice?

We eat loads of GF pasta. M and S do some great meals. You're lucky she was diagnosed so young so she can't remember her favourites - my daughter feels really sad about that.

Porridge with fruit
GF cornflakes with sliced banana
GF weetabix-type cereal
Home made yoghurt with berries, nuts, honey
Boiled egg with toast

Lunch
Crackers with cream cheese
Tuna salad
Omelette
Sausage sandwich
Home made soup

Dinner
Chicken casserole
Baked salmon & rice, veg
Baked cod & steamed potatoes, peas
Jacket potato with topping

We’re a family of 3 coeliacs all vegetarian I have a nut and oat sensitivity too

Breakfasts are varied

Cereal
Toast
Fruit salad
Scottish pancakes
Waffles
Fruit bread
Cooked hash browns scrambled egg mushrooms beans

Lunches

Ds takes schar cobs with various fillings, wraps occasionally pizza

Dd at home with me will have homemade soups
wraps
something on toast
Jacket potatoes with various fillings

Dinner

Lasagne
Spaghetti Bolognaise
Pasta with sauce and garlic bread
Sweet and sour quorn
Quorn in white wine sauce with rice
Chips and burger/sausage
Thai noodles
Vegetable curry with naan and homemade bhajis
Chilli with rice or sweet potato
Fajitas with nachos and onion rings
Homemade pizza
Gnocchi in homemade tomato sauce
Jacket potatoes
Homemade quiche veg and wedges
Homemade cheese and onion pasty

I use Pinterest for some really fab recipes which have generally been peer reviewed
