Coeliac friendly cake recipe

Can anyone recommend a sponge cake recipe that is coeliac friendly? I'm looking to make a cake for my sisters baby shower. Thanks Smile

I just replace regular flour with gluten free (dove’s farm works well).

Just substitute gluten free flour for ordinary. Doves farm self raising is the one usually available in the supermarket. You don't need a fancy recipe unless you really want to do something different.

If you want a Victoria type sponge, I would do:
3 eggs, weigh them shell on and then use same quantities of flour, caster sugar, butter, a tsp of vanilla extract and a half tsp of baking powder (make sure it's gf)
Into 2 greased and lined 8" sandwich tins and bake for about 25 mins at 160oC
Then sandwich together with jam and cream or butter cream of whatever you fancy.
To change the flavour, just add essence of whatever you prefer, or sub some of the flour for cocoa powder.

A plain victoria sponge is the hardest to get right gf imo. Substituting gf flour in a normal recipe works to the extent you have something cake like and edible but there are much better gf options out there in my opinion.

The lemon drizzle cake linked to up thread is good and carrot cake also works really well. I also like chocolate cake made with butter beans.

I'm sorry that's your experience @soulrider I have never had a problem. My cakes are always complimented and praised and no-one would known they are gluten free. The recipe I outlined works perfectly. It's all in the whisking I think. Whisk more than you think you need to until the mixture is very light. Works every time.

This with gf flour instead. It's absolute delicious and pretty much the only cake I make these days. I'm a coeliac and it's truly amazing

Victoria sponges are very hard to get right IME
