What is making me bloaty?

About 18 months ago I was feeling very bloated all the time, permanently hungry but also full. I had some blood tests and all fine. Tried cutting out wheat and hallelujah, everything got better. I had more energy, I easily lost the extra 4 stones I've been carrying since my teens, I felt, for the first time in my life, as though I was in control. My appetite told me when I was hungry, and again when to stop eating. It was a fantastic discovery.

A couple of times since I've eaten wheat and felt awful because of it. It makes me feel gross and bloated, but also screws with my appetite, making me feel ravenous even though I'm full.

But now I'm having similar symptoms again and I can't work out why. I've not been eating wheat.

Yesterday I ate:

B: GF cereal with coconut water
L: Leek risotto
D: baked potato with butter, cheese and coleslaw
Some dark chocolate
(not a very healthy day, it was what I felt like eating)

This morning I woke up feeling so bloated I couldn't face my morning coffee. Didn't manage to eat a thing until lunch time, when a couple of spoons of rice made me feel full and gross.

Could it be the chocolate? Or dairy? I have a bit of milk in my tea, and butter and cheese once or twice a week.

Was the stock for the risotto definitely gluten free? And was the chocolate?
My DM is the coeliac, not me, but I know she's been glutened by risotto in the past.
