Help for lazy EGG FREE first birthday cake

I'm recovering from mastitis and baby is recovering from virus, but somehow I need to get it together in time to cater her first birthday party this weekend!

I know egg-free cakes are impossible to find in supermarkets but has anyone come across one anywhere else? I'm making savoury food and can't face attempting (and icing) a birthday cake, I'm not a baker at the best of times.

Would it be bad form to make rice crispie or cornflake cakes or similar for the tots? Or any other suggestions for what I could do instead (candle-friendly)? She is also allergic to nuts. Thanks in advance

Seriously - don't worry. For a one year old I would get one from the allergy section in the supermarket. Or yes make chocolate rice krispies cakes.

Thanks Iggly. I'd happily buy one in but so far I can't find any egg free cake on sale anywhere. Not even the Mrs Crimble dutch apple loaf that other MN threads have mentioned

Rice crispie cake sounds fine. I think most parents prefer their child to eat a small quantity of cake so it's perfect.

Where are you? Halal cakes are egg less I think so if there is a halal baker near you, try there.

I did this a couple of years ago for DS's first birthday as one of his friends is wheat/dairy/soya/egg allergic and it was really nice. a different texture to a normal sponge but very tasty and very easy to make.

Oh I was coming on to say Mrs Crimbles! I used to get it in Sainsbury's when ds1 was egg/dairy free.

Rice crispie cakes sound just fine though!

Oh and icing, butter, sugar, cocoa powder and a bit of milk. Perhaps decorations from the supermarket, dr oetker do nice butterfly ones that I think will be fine.

It will be baked and decorated in under an hour.

If it still seems too much tesco have a good free from section :)

10oz Self raising flour
6oz Caster sugar
¼ tsp Salt
1 tsp Bicarbonate of soda
½ pint Milk
¼ pint Corn oil
3 tbsp Golden syrup
1 tsp Vanilla essence

For the filling

3 1/2 oz butter, softened
5 oz icing sugar
drop of vanilla essence
6 tbsp nice Jam

The Method:

Pre heat your oven to 180C Gas mark 4
Line the base of 2 X 7 inch cake tin with baking paper
Sift the flour, sugar and salt in to a bowl and make a well in the centre
Mix the bicarbonate of soda with a tbsp of the milk and pour in to the well
Add the rest of the milk along with the oil, golden syrup and vanilla essence and beat together to make a batter
Add the mixture to cake tins and cook in the oven for 20-25 minutes (until they bounce back when touched or when a skewer is inserted it comes out clean)

It does bake quite dark on the outside but is super delicious. You can fill and ice with buttercream too.

Hi, I have had the same problem - this recipe is probably the easiest and is amazing - i then ice it then add a rice cake topper picture which i order personalised from ebay.

all of these recipes work though the banana one is the quickest.

I have previously ordered from an indian eggless cake shop, and although the cakes were lovely i was concerned about the nut cross contamination as they do use a lot of almonds etc in the decoration, also they covered my sons cake with mountains of cream, plastic flowers and lots of glitter and he wasn't too impressed (no icing for starters) - it was quicker and cheaper for me to make one than drive 20-30 minutes to collect one of these. but i made a lot of bad cakes till i find these recipes.

they dont do egg free cakes in the free from sections i have found, some dairy and gluten free and mrs crimbles dutch apple cakes i cannot find!!

I have previously iced a giant chocolate crispy cake and that was great.

Orgran cake mix - either chocolate or vanilla. Add water, Orgran no egg powder and pure olive butter spread. Comes out great every time I have used it. Its also nut free - you can order the mix and no egg on amazon.

Has anyone ever had problems with icing sugar?

I used to avoid it with ds1 because it said on the packet that there may be traces of egg. Presumably it is produced on the same line as the royal icing powder which does have egg in it.

I have never had any issues with icing sugar, my DS is an egg detector!

If you are in London, there are quite a few shops (run by Hindus I think) who sell egg less cakes.
