Have also put this inthebaking forum.

My gluten free cakes are always yummy but the scones are heavier. anyone any tips? I use the amount of raising agent I would in normal wheat flour scones but should I add mre or is there a different recipe for gluten free scones?

I make scones using

350g Doves Farm Gluten Free self raising flour
2tsp baking powder
100g ground almonds
115g butter
60g caster sugar
250ml buttermilk

Rub together flour/ baking powder / almonds/ butter then add sugar and buttermilk.

I tend to find with gluten free baking that adding almonds keeps the cakes moist and buttermilk gives a much better texture.

I would recommend using a little bit of xanthum gum in all gluten free cooking.
