Can anyone recommend me a dairy and egg free banana cake recipe please?

Or not necessarily banana cake, any old cake will do.

After a couple of 'interesting' attempts, recommendations would be good!

THIS is a tried & tested recipe of mine

I have made it as dairy/egg free before for DDs class birthday treats as she had an allergic class mate - I have added comments underneath the recipe that tell you how I did that

Cream together 100g margarine and 100g brown sugar. In a separate bowl mash two very ripe bananas with a shake of cinnamon and half a tsp vanilla extract. Mix the mashed bananas into the butter/sugar, then add 125g self raising flour. You can add raisins too if you like.

Put in a small loaf tin or you can make 6 large muffins with it. Bake at 180 for 45 mins.

Not really an allergy thing, but I'm a bit crap about having the right ingredients in when i fancy baking Blush Banana makes good egg substitute for Victoria Sponge, and OJ can be used instead of milk if it comes up a bit dry. The texture is slightly denser but not in a bad way

1 egg = 2 oz banana

I just mash up a couple of bananas, stick in a cup of porridge oats, some dried fruit and every now and then a bit of honey. If you can eat bits of dark chocolate that's pretty good in it. Blueberries work well, apple not so much. It looks weird but tastes quite nice!

I'd recommend this booklet produced by a really nice couple who run a vegan cake shop in Hastings. There is a banana cake recipe in there if you want me to post it. (I made a coffee icing for the grown ups too which went down well). After years of catering for allergic DS & DD I've decided it's better to start off with vegan recipes which have been created by people who positively choose that diet and want to eat nice food rather than sadly substituting bits of old recipes :) Shelley - the owner is also happy to answer questions on techniques, flops etc...

DD just got off to sleep so I'll add it quickly in case I don't have a chance to for a while:
It's a small cake - uses a small loaf tin (I think they're 1/2lb tins - Lakeland do them) or a half size 6 inch cake tin

4oz self raising white flour
white sugar - think there's a typo here as the amounts don't match up in cups and oz... but I put in 4 oz which was very sweet - next time i'll try 2 I think
Extra sugar for sprinkling on top
1 tsp baking powder
1 tsp vanilla essence
3 very ripe bananas (two for mix and one for top)
1 fl oz (30 ml) vegetable oil
4 fl oz (100ml) water

Preheat oven to 170c & grease the tin
Mix dry ingredients
Mash 2 bananas well and add vanilla essence, then add oil and water
Mix dry and wet ingredients
Add to tin then slice the third banana and put on top, pressing into the mixture so its slightly submerged.
Sprinkle generously with sugar in top
Cook in middle of oven for 45 mins

As I said I iced it with coffee frosting - icing sugar, dairy free marg (M&S tastes nicest) and a shot of coffee and this went down well. Next time I might add some cinnamon / allspice...
