Butter free bread recipe

Does anyone have any bread recipes (or shop bought recommendations) for bread without butter or sugar? Also has to use wholemeal flour.

Hope I'm not asking too much!

No need to add butter in a normal wholemeal loaf - just use olive oil, sunflower oil or marg, or anything like that in place of butter in any recipe.

With white flour you can just leave the sugar out - or replace with honey (I know honey is sugar - depends on whether you also want to avoid that!). I don't know if it is more important to include in wholemeal loaves.

I have the following recipe for a spelt oat loaf, although have not made to this exact recipe:

12oz spelt flour
4oz oats
2tbsp olive oil
1 sachet easy blend yeast
pinch of salt
12 fl oz warm water

Make dough, knead 10m, rise in warm place 1hr to double in size. Turn out, knock back, shape into loaf and roll in oats. Place in 1lb loaf tin to rise again. When risen, bake at 200 degrees / GM6 for about 20 mins or until slides out easily and sounds hollow when tapped underneath.

Just replace the butter with the same weight of olive oil - I tend to use 2 tbs for 500g of flour. Not sure about sugar free though as the yeast needs it to grow.

Here's my recipe:

280ml water
2tbs sugar
1tsp salt
2tbs oil
100g semolina
400g flour (I mix wholemeal and white 1:3)
1.5tsp yeast

My panasonic bread machine books also says that wholemeal flour needs to have vit c added if made with 100% wholemeal - if a 50/50 mixture of white brown it doesn't. It also says that sugar adds sweetness and flavour, softness to texture, crust colour, contribute to keeping qualities as retains mositure and provide food for yeast.

I don't use butter in bread making but olive oil instead as the books says substitute 3 tbl for 500g of flour.

Thanks all, it's for a friend so not sure about the honey thing. I will experiment with my bread machine and oil this weekend. Will let you know how they turn out.
