Anyone got a tried and tested EGG-FREE cupcake/fairycake recipe?

DD1's birthday is coming up. She would love to have cupcakes instead of a big cake this year. I've tried a couple of recipes in the past but the results were disappointing.

Anyone got a recipe that results in nicely risen, light cakes.

Thanks families I'm a bit Blush because my fall back birthday cake recipe is a chocolate condensed milk cake and it never occured to me to try it for cupcakes!

I'll do a trial run with this recipe.

Anyone else got a suggestion for me to try?

Thanks parkavenue I'll take that recipe too if you have it. Even if it doesn't work out for the birthday it sounds like something I would bake.

You can always replace the egg with 1 tbsp ground flax seeds mixed with 3 tbsps cold water! I have lots of recipes on my blog but I'm not sure if I'm allowed to mention it here!

Habdab Thanks for the link. I've tried egg replacer and the results are ok but so far haven't been able to achieve a good texture with it.

BBC good food magazine has a recipe for sticky chocolate cake without egg. Look it up on their website. Its lovely & it worked with dairy free spread so was able to make egg & dairy free.
