Wheat free suet sponge pudding recipe

I hope it's ok to post this frivolous request here. I thought it would get a better response than in the general recipes thread.

I don't eat wheat but have a serious craving for some kind of suety, spongey pudding. You know the kind of thing, with yummy jam dribbling down the sides. Does anyone have a recipe for a wheat-free version?

I avoid wheat and i always cook with Kamut flour it has a tiny amount of gluten in it so if you're coeliac you could use the gluten free flour with any normal recipes.

Thanks ppeatfruit. I'm not coeliac but have discovered an intolerance to wheat, ie bloating and feeling very ill after eating it. I've been using brown rice flour, potato flour and tapoca flour as substitutes with xanthum gum but wondered if there was a specific recipe for suet pudding. Am experimenting tonight with a cobbler recipe Grin.
