Does anyone has a recipe for an egg free chocolate cake?

4 oz creamed coconut
2 oz cocoa powder
14 oz self-raising flour
1 level tsp baking powder
lge pinch salt
8 oz light brown soft sugar
7 fluid oz sunflower oil

Oil and line a 3 pint loaf tin. (I have used a round cake tin and it was fine although it does crack a bit) Pour 22 fl oz boiling water over coconut and stir till dissolved. Cool. Sift cocoa, flour, baking powder and salt into a bowl and mix with sugar. Make a well in the centre and pour in coconut mixture and oil. Beat with wooden spoon to make a smooth batter. Pour into prepared tin and bake at 180 C / GM 4 for 1 and 1/4 hours or until well risen and just firm. Leave to cool in tin for 10 minutes then turn out and leave to cool completely.

Hope this helps! I have made it a couple of times and thought it was quite nice (although it did crack as mentioned). It is usually quite moist and almost gooey. Once I overcooked it and was apologising to the vegan friend I made it for that it was not very nice. He said " you don't eat many vegan cakes, do you - this is FAB" I cover it with dark chocolate e.g. Green and Black's which is dairy free.

I've also had some success with using ground linseed as an egg replacer in cakes. You need to grind it in a coffee mill or similar, then add 1 level tbsp ground linseed to 3 level tbsp water for every egg in your usual recipe. Mix together and leave to stand for about 3 mins. You'll see it goes sort of viscous and horrible just like a real egg! Add to your recipe and cook in the usual way.
