Is anyone else making the most of this gloomy weather and bonus hour?

Brunch: left over Domino's
Dinner: Full blown roast - beef brisket, sweet potato mash, Yorkshire puddings, cauliflower cheese, broccoli, roasted carrots, roast potatoes (and corn on the cob requested by Dsis)

Looking forward to seeing everyone else's plans for future inspo x

Me too! Delia's recipe.

For dinner we just had Meera Sodhal’s Potato, Chickpea and Samphire curry because I found some samphire on the Yellow Sticker aisle! It’s a dry curry and utterly addictive and delicious - my kids were initially suspicious ( they tried samphire before and didn’t like it) but this time they were totally hooked.

Alongside we had a little bowl of plain rice and a lovely veggie curry of aubergine, courgette, carrot and broccoli.

For dessert we each had a little bowl of Greek yoghurt mixed with a spoonful of smashed up homemade. If you have made honeycomb then this dessert is the simplest thing in the world. I cannot describe how delicious it is and you only need a few spoonfuls to feel totally satisfied.

Lunch was cheese toasties and tea was a roast dinner with pumpkin pie (I’ve never made this before but it was lovely!) and custard for afters

Alas I am on an incredibly low carb diet so while the family enjoyed the above, I had salad for lunch and no roast potatoes, Yorkshire puddings etc with my tea… and only a sample of the pumpkin pie!

Chicken pie with roasted cauliflower and sprouts. Really hankering after a delicious dessert now but we’ve not really got anything in.

My dad had shepherd’s pie and peas. DH had a chicken and vegetable pie with lemon and herb rice and peas. I had five bean spicy soup. Dad and DH will be having apple and plum crumble with custard, I am having Greek yogurt with frozen cherries.

Lamb casserole down in slow cooker. All bunged in after a windy walk on beach with dog.

I did a version of Nigella’s Italian roast chicken with leeks peppers and black olives.

Roasted a whole chicken with seasoning lemon and garlic. Also in the oven dish had four leeks cut into large thirds. And half a jar of black olives.
Took the chicken out once cooked to rest. Added baby tomatoes and a large bowl of cooked rice to the oven dish with the leeks and olives and roasted for 15-20 mins.

It’s so good, the rice absorbs all the lovely chicken and lemon juices.
