Any easy vegan dinner ideas or recipes you'd like to share?

Do you have any easy vegan recipes to share that aren't chickpeas based?

My sister is vegan and comes over for dinner every Tuesday and I just wanted some inspiration.

I've made things like lentil Bolognese, shepherds pie, butternut squash soups, sausage bakes, jacket potatoes, tofu ramen bowls, a few curries etc

Any fab recipes you use that I could steal??

We eat most things, DD7 doesn't like too spicy, kind of butter chicken level spice is her okay. I can't eat a lot the meat replacements generally,they give me stomach pains.

I have the speedy bosh book. There are some really good recipes in there. There's a kind of lentil shepherds pie which has a pestoish spinach sauce that's one of our favourites.
There's a butter tofu curry that we also like in it.
My kid loves the taco bowls too.

Look up butternut squash red lentil curry traybake. Really good and simple.
We also like 3 bean chilli with wrsps, homemade salsa, grated vegan cheese, salad and avocados.
Spicy sausage pasta made with linda mccartney cooked sausages in a sauce made with sauted onions, garlic, chilli flakes add tom padte, tinned toms and carton of soya cream. Cook petisbpois with the padra and combine everything.

Vegan Pinsas are easy to do. I usually do one tomato based with roasted vegetables- I caramelise the red onions and roast peppers, courgette and aubergine and add some artichoke from a jar. Then I do a creamy one with vegan mascarpone or another cream cheese (I find cashew based taste nicer than coconut), with caramelised onions and mushrooms with truffle oil. I buy the bases pre made.
Also fajitas or tacos would be nice- serve everything in separate bowls for everyone to assemble themselves if anyone wants non vegan cheese. So black beans, avocado, peppers and onions some vegan sour cream and cheese.

Some great ideas here, will be stealing myself! One I do quite often is get all the veg that needs using and roast them, putting the root veg in first for a bit longer; then I add a tin or so of tomatoes and beans of my choice, garlic, herbs, paprika etc etc then cook until it's all done and pile on top of some quinoa or rice (definitely not the packet sort I've whacked in the microwave for 2 minutes!). Plonk a pile of leafy green salad next to it. It's one of our favourites, and never tastes the same; also keeps well for leftovers.

This sounds great, I’m going to try it on Friday night. I love flexible recipes like this where you can use whatever you have.

I'm a meat eater but I absolutely love Alfie stein/Alfiecooks recipes. I eat his firecracker ramen most weeks. Highly recommend checking him out

Bean chilli is nice, I just get a mild chilli sauce ( or make one from scratch) and add various types of beans.

Butter bean stew is also good ( Google has various recipes)

A ratatoille is simple and lovely - rice or wedges as a side, add feta to veggies. Lentil and spinach dahl (I've got a cracker of a recipe for that), same. Also got a savoury rice recipe which just uses the OXO veg stock cubes - they're vegan. If she's fine with meat subs then I have so much more suggestions.

I do a baked orzo thing which is really good. Essentially you take cherry tomatoes, tenderstem broccoli, cannellini beans, peppers, spinach, and a couple of cut up sun dried tomatoes, mix them together in a lasagne type dish, add orzo, half a jar of red pesto, a bit of water, mix, and bung it in the oven for 20 minutes, stir, then another 15 in the oven. You could switch up the veg depending on preference. I’d top it with grated cheddar cheese and a bit of Parmesan before the second oven run, but that could be skipped or use a vegan version. (We’re not vegan - or even veggie - so use regular pesto but obviously sub in a vegan version there too.)

We've had it as a main meal before with rice. Was good 😊

Don't need protein in every meal every day.

The book "The green roasting tin" is good. Half of it's vegan, half vegetarian (and you could easily sub out some of the non-vegan ingredients. You can get vegan cream (or use coconut milk), vegan cheese etc). I love that book because each meal is designed to be cooked in one tin/dish.

I'm back to being vegetarian but was vegan for a year or so - I used to make a vegan macaroni cheese (add a spoonful of yeast flakes to the cheese sauce when cooking to give it a richer flavour), vegan pizza using all of the normal veggie toppings and then vegan cheese. Some of the vegan burgers are good now (I know you want to avoid the meat substitute ones, but there are plenty of others), you could have them with homemade potato wedges and coleslaw or potato salad made with vegan mayo etc.

I know people on here are brilliant at coming up with recipes, but if you want I can (possibly!) take a photo of the index page of the Green Roasting Tin book and then photos of any recipes you'd like to try. May be beyond my technical abilities though so don't get your hopes up too high!!
