What's for dinner?

I know I am posting early.... jetlag and i have been away for 6 weeks as a parent has been critically ill so living off hospital cafe meals (She;s fine now, home and back on her feet)

I need something nourishing, weather-friendly and preferably vegetarian / adaptable for vegetarians in the household.

I'm thinking a gorgeous pea, asparagus frittata with salad. But would love to know what others are having. Smile

DH and I are going out for Indian food. I've got Chinese radish and noodle salad on the list for tomorrow.

Thinly sliced cucumber and radish, dressing of rice wine vinegar, sesame oil and soy sauce. Add pickled or freshly grated ginger. Fresh coriander. Rice noodles. I'm adding cold chicken but you could use tofu too.

Beef stir fry. I've got some beef out of the freezer and there's a load of veggies that need using. I'll do my usual and make it up as I go along. Some chilies, garlic, ginger, Chinese 5 spice etc...

I’m making Tarka Dahl for dinner tonight. Waiting on the big shop coming on Friday so just using staples I’ve got at home. Mind you I love Dahl so it’s no hardship.

My current favorites - last night - Eggs chips and homemade coleslaw is my idea of cheap easy nourishing and comforting as it sounds like you have had a stressed time

tomorrow night - feta and braidbean couscous salad ( add whatever veggies you like and dress with olives and sun dried tomatoes)

Tonight it is roast chicken with mash, turnip, cabbage, stuffing, gravy and yorkshire puds. Love a roast dinner midweek.

Last night was pizza express pepperoni pizza, tonight is conchieglie pasta, plum peeled tomatoes and tuna heated up, cheese sauce, Parmesan. Or I might do the rana potato gnocchi with a sauce.

I’m planning on making double portion of mash and having toad in the hole with it and veg and gravy tomorrow. Use veggie sausages.

That is one of my planned meals. Recall my nana in her 80s frying me an egg and chips in chip pan when I went round for dinner.
