Quick dinner ideas using chicken, mushrooms and peppers tonight

Hey everyone,
I need some Inspo for dinner tonight. I make the same things over and over again like a chicken curry or a lasagne. I have some chicken that I wanted to use along with some mushrooms and peppers that need to be used up, please give me some suggestions of what I could make that's quick and yummy!

Just what pps have said, although i did a tray bake for 1 with the same ingredient plus tomato and garlic and put it on a pitta was lovely. Took 30/40 minutes.

I was going to say pasta too. A quick white sauce would bring it all together if you didn’t have anything else to use as a sauce for it.

What kind of cuts of chicken is it? Drumsticks? Legs? Thighs? Boneless breast fillets? Could make a bit of a difference to what would work. You could wrap fillets or drumsticks in foil with sliced red pepper and mushrooms, season with salt and pepper and maybe some garlic or even a little chill, drizzle with olive oil and wrap the foil to make parcels and give them about 25 minutes in the oven at 190 degrees. You could serve it with rice or baked potatoes (You could do them in the microwave).

Marinade the chicken for 30 mins in 2tbsp miso paste, 2tbsp gouchang paste, 1tbsp soy sauce, 1tbsp honey, some ground paprika and coriander.

make a broth with 500ml stock. Add in 3 garlic cloves and some chunks of ginger. Simmer 20 mins then strain.

fry chicken. Add veg. Fry. Add rice and broth
